Navy Bean Soup with Ham
I made this recipe as is the first time and it was quite tasty without any changes. I think if you rate a recipe you need to follow the directions-at least the first time! I have made some changes since then. First I use low sodium chicken broth instead of water. I also use two or three carrots and an additional clove of garlic (we like garlic). and an additional bay leaf since I use fresh bay leaves from a tree and they don't seem very strong. I also added about a half a cup of chopped celery leaves and a small diced potato. Rather than removing some liquid and putting it in the blender to thicken it, I use my potato masher and that does a fine job without having to wash the blender.

Aunt Norma's Rhubarb Muffins
I've been making these for years and they are delicious, however we have a few alterations that make them even better. First, we don't put walnuts in the batter, we grind up pecans fairly fine and add them to the topping. It gives them a wonderful crunch and the pecans toast as you cook the muffins giving them an even better flavor. Second, shake the rhubarb in the flour before adding it to the batter so it stays well distributed throughout the batter. Third you can make these muffins as a cake, it works perfectly in a 7x11 pan, but it rises very high so put another pan under it just in case it spills over. I'm usually too lazy to bake muffins so generally make it as a small cake. It also freezes great!

Quick Chicken And Wine
This was delicious and so simple. I second the review that recommends a non stick pan, although it doesn't produce as good a crust as a cast iron or stainless pan. I made a quick pan sauce by adding a little wondra flour after we took the chicken out and it was terrific on noodles.
