Roasted Chicken Thighs over Braised Escarole with Pine Nuts and Mozzarella
I've made it just as is and twice afterwards but added cannellini beans to the escarole.A bit of crisp bacon crumbles to top it off and a side of marinated cherry tomatoes...very nice.

Greek Honey Cake
My friend was born in a small village in Greece.I made this for him as a surprise...said it was just like his mama's.Needless to say he was very happy.Thank you for this authentic recipe which I followed the exact recipe.Yes,it was almost juicy with the very sweet honey lemon sauce...this is a true replication of authentic Greek cuisine!

Lamb Stew with Green Beans
I have a Greek neighbor who made this for me but used beef,onions and slow cooked this stove top for 2 hrs till the beans were quite soft..It was very nice.It was served as is with crusty bread and a feta salad.He tells me in Greece families use this method for any type of meat including pork and chicken.I am going to try this tonight using pork.I may omit the mint and substitute sage.To the beef he added a touch of nutmeg with the sugar.Amazing!!!
