Grandma's Chocolate Zucchini Brownies

This was a big hit! I did not use the walnuts and I used Splenda for the sugar. After I pulled out of the oven I took a spatula and spread out the chocolate chips to make it look like icing. All my family and friends loved them, even asked me for the recipe. Great way to get picky eaters to have some vegies!!

Mother's Day Pie

Love it! I'm a diabetic and followed the advice of another diabetic 'rater' making it with Splenda, adding 1/2 c more coconut plus some frozen raspberries and baked for 45 min. it came out perfect, even my husband had some & he's not diabetic. Next time I'm going to add more raspberries, they really added a nice flavour & it looked pretty enough to serve to company.

Texas-Style Baked Beans

I did this in a slow cooker to be part of our Fish Fry Party Menu we had for a friend. Was a big hit and the leftovers the next day went over baked potatoes with some shredded cheddar & sour cream for supper.

Easy Apple Crisp

Wow, I am definately keeping a white cake mix as a staple in my pantry. This was so easy & VERY tasty. I took the advise of a few reviewers and added some lemon juice, allspice, nutmeg & cinnamon to the apples. I also added 3/4 cup oatmeal to the cake mix before adding butter. Even my husband, the apple crisp King loved this!!

Lemon Chicken Piccata

Yummy!! I'm such a fan of lemons had to use this recipe and wow, was impressed!!! I used boneless chicken thighs, didn't even really cut them up. Followed the recipe to the max otherwise. Was a big hit with my husband. I'll be making this again for sure!

Gnocchi and Peppers in Balsamic Sauce

What a fabulous side dish, next time I'll consider making it a main dish. Took the advice of previous raters and omitted the mushrooms and only added 1/4 c balsamic and 1/4 c butter. I'll be making this recipe again for sure!

Chicken and Gnocchi Soup

I just made this soup for dinner tonite - WOW!! I followed the recipe word for word, using the cornstarch to thicken. The only extra thing I did was added 1 tsp of cumin - oh ya... extra YUMMY!! I'm making this again!!!!

Salsa Chicken Rice Casserole

I did this with several variations. Used 1 cup Brown Rice, elminiated the water, cut the chicken in to bite size pieces and sauted it in some olive oil with chopped onion & garlic and added some mexican seasoning. I spiced it up with a tbsp of chopped jalenpenos which I added to the soup mix.I used cream of celery soup as the chicken one had MSG. Every Wed I make dinner for a friend with ALS who loves spicy food, this was a big hit for him!!

One Skillet Corned Beef Hash

Yummy!! I usually do a casserole type of meal with cabbage for my corned beef indulgence but thought I'd give this a try as it is easy & quick. I read the reviews - adjusted the recipe - only did 3 potatoes and 4 tbsp vinegar & added peas. Love the vinegar in it! Served on brown rice and my hubby went back for seconds!

I did not care for this recipe. I claim to be a pretty good cook and I followed the recipe to the letter. did not rise, too dense. Will never follow this recipe again, I'll go back to my own.

Have to say, followed the recipe except did it with walnuts instead of pecans. Not my best... probably won't make this one again. Maybe the baking time was too long?? was very dry??
