Italian Sausage Soup

My entire family loved it, even my very picky 8 year old. Didn't care for the spinach, so I will leave that out next time. Double the stewed tomatoes!

Carrot Cake III

The best carrot cake ever! My guests raved and there was no cake left by the end of the party. Left out the nuts since my family was allergic. Added 1 small Motts applesauce and it was so moist. Made 2 - 9" round cakes. There was not enough frosting to ice the sides. Just put icing between the 2 cakes and on top. But that was enough since the icing is very rich. Make this carrot cake, I promise you won't be dissappointed!

Baked Halibut Steaks

Great moist fish. I only had 1 roma tomato so I added 1/2 a can of crush tomatoes along with chopped parsley, spinach and mushrooms. I poured all the sauteed veggies over the fish to cover, then sprinkled on the feta. I covered with foil for 10 minutes and cooked without foil for 10 minutes. (I had large pieces of fish) It was delicious and fresh. Next time I will add more fresh basil and maybe a bit of oregano.

Black Bean and Couscous Salad

Yum! Added parm cheese, but only used 3/4 can of beans. 2 cans would have been way too much. Only used 1/2 bag of corn.

So fresh and easy to make. The herbs make this dish. Use fresh herbs if you can - they really make the flavor pop. Great dish for entertaining!
