White Chocolate Raspberry Cheesecake

Oh my goodness!! This recipe is truly worthy of all the wonderful reviews. I made this for a dinner party last evening and everyone loved it!!! It was the most beautiful cheesecake I have ever made and SO SO SO delicious! So here are my helpful tips: First of all I made it exactly like the recipe calls for. No changes. I used the Nabisco Chocolate Wafers that are found beside the graham cracker crumbs in my grocery store. I don't have a food processor, so just put them in a ziplock bag and crused with rolling pin. The taste of these wafers is like an oreo without the cream. PERFECT for the crust. Had never used these before. They are great! After reading lots of the reviews, I decided to try a water bath for the first time. It worked beautifully and the cheesecake looked like something from a restaurant. Seriously. So just wrap your spring form pan with foil about half way up the sides to ensure no water gets in. When ready to bake your cheesecake, set your cake in a jellyroll pan and once you slide this into your oven, then carefully pour HOT water into the pan so that it comes up about an inch or so up the side of your springform pan. That's all there is to it. I baked mine for exactly 55 minutes and then turn oven OFF. Leaving oven door CLOSED, let the cheesecake sit in oven for one additional hour. TRUST worked beautifully. Remove from oven, remove foil, cool and refrigerate. WONDERFUL!!

Morning Glory Muffins I

These muffins are absolutely delicious!! My weekend guests said they were the best muffin they had ever eaten. A definite keeper. The only thing I might do differently next time is to go ahead and stir the walnuts and wheatgerm into the batter instead of sprinkling on top. Some of the topping will fall off when you tilt the muffin and I like a no fuss grab and go and eat in the car breakfast and don't won't to worry about crumb topping falling off the muffin. Just picky me. FANTASTIC muffin recipe!!!!!!

Judy's Strawberry Pretzel Salad

Made this for weekend guest and it was tee-totally AMAZING!!!!! So, so delicious! Followed the recipe with one exception. I used fresh strawberries which I sliced (about 2 and 1/2 cups sliced). Strawberries this time of year are not real sweet so after slicing them I sprinkled a little sugar over them and stirred them up real good and that made them plenty sweet enough for adding to the recipe when the time came. I'm not kidding.....this is so beautiful and so delicious that it will definitely be on my list of things to make for any special gathering at my home. You have got to try it and you are gonna love it!! Don't change a thing. The ratios are perfect. WOW WOW WOW.

Chantal's New York Cheesecake

Made for dinner party last evening and I was not impressed. Taste did not have the wow factor. Mine did crack despite following the recipes instructions to a tee. I would definitely try the water bath technique the next time I attempt a cheesecake that other reviewers suggested. I have had much tastier cheesecakes. Probably will not make again. Kind of bewildered by all the 5 star ratings??

Perfect Summer Fruit Salad

I served this salad yesterday at a luncheon with girlfriends. It was the most beautiful, delicious fruit salad I have ever served. I followed the recipe exactly. I cut up all of the fruit the night before and made the sauce and poured over and let it marinate in the fridge overnight. I added the bananas the following morning about 3 hours before my event. The fruit salad is absolutely bright and beautiful and it tasted so, so good. This is a keeper for sure and I recommend it to all of you!!!!! PERFECT in every way.
