i have an interesting culinary history. i was born & raised vegetarian. then, about 9 years ago on a trip to brazil decided to start eating seafood. i have an active 7-year-old who i allow to occassionally eat chicken & i recently married a caribbean man who eats most meats except pork. while i enjoy cooking - it can be challenging with the different diets & of course i'm struggling to keep it healthy and also lose weight myself but not suffer a boring, bland, monochromatic diet whole doing it!!
My favorite things to cook
anything made from potatoes, cheese, a tortilla or seafood! i love the typical favorite foods - asian, mexican, italian. i do enjoy other ethnic foods such as ethiopian, indian, caribbean as well. basically anything well seasoned & soulful.
My favorite family cooking traditions
the women in my family aren't domestics! so, though i've managed to feed myself (to the point of needing to lose weight) i am not a domestic goddess, genetically speaking. but - i appreciate the appreciation my family displays when they are given a good meal. so, i attempt to keep it interesting! there are a few dishes that i'm asked to cook again and again & happy to do so. my 7-year old loves to bake and has even made a business out of it. my husband is the consummate caribbean cook taking painstaking time and using only fresh ingredients.
My cooking triumphs
i make a mean kale, bbq tofu, stir-fry & twice baked pesto potatoes. i'm also good with anything involving a tortilla - enchiladas, quesadillas, tacos. . .
My cooking tragedies
baking has been unappealing to me thus far & i'm still searching for the secret to not drying out things in the oven (cakes, biscuits, etc.)

Ginger Chili Citrus Salmon
I made a few adjustments to this but the family loved it. I substituted balsamic vinegar for the apple cider & used agave nectar to replace the honey. Also after I cooked the fish I reduced the remaining marinade on the stove top for about 15 minutes & it made a great glaze to add with the ginger & spice flavors becoming much more pronounced.
