Chicken Breasts with Balsamic Vinegar and Garlic

Pretty good, but not great. It's missing something. Next time, I will try it with the addition of sweet onions and fire-roasted tomatoes. Needs a little more *something* to it. As is, it's still a decent weeknight dinner. Just not as good as I had hoped.

Angela's Awesome Enchiladas

I did this the easy way and made it in the crockpot going by another users suggestions. That cuts down a lot of having to wash a lot of pans and makes shredding the chicken so darn easy. These are AMAZING, even without some of the ingredients. I used what I had on hand, so no olives, no green onions. They are better than at a Mexican restaurant. One of our local Mexican places is always busy, it's the best in town, and I still prefer these enchiladas from this recipe to theirs. They were amazing.

Roast Pork with Maple and Mustard Glaze

Absolutely wonderful! I am a lazy cook, so I took the easy route. I threw the meat and the glaze in the crockpot on low for 6 hours. After 4 hours, I put in some peeled baby carrots and a sliced onion. Came out absolutely delicious. Yummy!

Old Settlers' Baked Beans

These are great! I changed it just a tad to use things I had on hand. I used one large (28oz) can of Bush's Baked Beans and one can of drained and rinsed black beans. I skipped the regular sugar and added an extra 2 & 1/2 tablespoons of brown sugar on top of the 1/3c. I also added a few dashes of onion powder and garlic powder. It was delicious! I will make it again for sure!

Yummy Honey Chicken Kabobs

Really yummy! I added crushed pineapple to the marinade for the last hour or marinating (full time about 8hrs). Instead, I baked the chicken breast and vegetable kabobs of red and green bell peppers, sweet vidalia onion, and pineapple chunks. I also sprinkled a little seasoned salt and cayenne pepper on top of the kabobs. I basted the kabobs and chicken breasts with the marinade throughout the cooking and they came out great. Both the chicken and vegetables were juicy and tender. Will be making again!

Country Green Beans

These are the best green beans I've ever had! And so easy! I simplified this recipe a bit by using canned green beans (draining about 1/2 of the liquid). I used 3 pieces of bacon. I fried the bacon half way in a pain, cut it up into smaller pieces, then dumped it and 1/2 of the bacon grease in with the beans. Then I sauteed vidalia onions in the remaining bacon grease, then dumped those in and let it sit on low for 20 mins to meld the flavors. I also added a few small pinches of Stacey's Hamburger Seasoning (search for the recipe). It was the BEST green beans I've ever had. Sooo delicious.
