Vegetarian Chickpea Sandwich Filling

Totally delish! Made this as a light supper with a bowl of soup, and I had PLENTY of leftovers. Midnight snack, breakfast, and lunch for the next day! I added a bit of greek seasoning, and more mayo, and it was gobbled up!

Mashed Potato Layer Bake

Made this dish for a large potluck......BOY! It was a hit!! The youngest baby at the party would only eat this and grapes, and everybody went back for seconds. The only change I made was that I used more cheese, it just didn't seem like enough for a cheese lover like me! I was surprised at how easy it was to make as well. I had never cooked with fresh sweet potatoes, nor have I mashed them, but their texture was delightful! Needless to say this dish is a star, and if you care to make it, you will not have leftovers!

Quick and Easy Alfredo Sauce

After reading all the reviews I decided to try this out as-directed first. And let me just say: AMAZING!!! The only did 2 things differently, I used Smart Balance Spread instead of butter (i try not to use butter or margarine), and I added a pinch of Greek Seasoning. I was afraid this would be too liquidy or too cream cheesy, but after simmering it for a few minutes, it was perfect! My boyfriend and I loved it so much I even froze some to use later! In the future I'd definitely use fresh garlic instead of garlic powder -- if it was this amazing with garlic powder I can't wait to have it with the real deal!!

Chicken Cordon Bleu II

There is only one word for this dish: DECADENT! I made a romantic dinner including this, some string zucchini, and white wine... This was so amazing we didn't even touch our veggies!! I have a tiny counter space and no mallet, so I just butterflied the chicken (or attempted to, anyways), and I added a little bit of Greek Seasoning to the flour. Delicious! In the future I would definitely use more cheese & ham, or else try to get the chicken much much thinner. This meal should come with a warning label: Do not operate heavy machinery!
