I am a college kid constantly looking for the gourmet experience. I love experimenting, even if it is just with ramen or home-made bread! Give me a challenge, I will conquer it (especially if I can eat it!!!)
My favorite things to cook
Give me a recipe, I will cook it. I especially love hearty meals that everybody has to sit down & enjoy. I love putting effort into cooking and seeing people enjoy the results.
My favorite family cooking traditions
My family is Scottish. So give us simple, give us fried, give us meat. Also, Indian food. It is not unheard of to have curry & chips (Scottish style, of course) for dinner in my house!
My cooking triumphs
Making chicken cordon bleu from SCRATCH, including the wine sauce, in a college student kitchen. :)
My cooking tragedies
Attempting to ease my parents into the idea of ground turkey when I was 14, I made Meatballs Florentine (turkey meatballs with spinach & feta). I substituted Parmesan for Feta, forgot the spinach in the microwave until after the meal, and burnt the meatballs. OOPS!

Vegetarian Chickpea Sandwich Filling
Totally delish! Made this as a light supper with a bowl of soup, and I had PLENTY of leftovers. Midnight snack, breakfast, and lunch for the next day! I added a bit of greek seasoning, and more mayo, and it was gobbled up!

Eagle Salad
WOW! When I posted this I definitely thought it was private, I'm glad everybody likes this!! I can't figure out how to edit this, so I'll say this: 2 tablespoons = two heaps of the big spoon in your silverware drawer. Add salt & pepper (or garlic powder or greek seasoning) to taste. I am an onion fiend, that's why it calls for so much onion. :D

Quick and Easy Alfredo Sauce
After reading all the reviews I decided to try this out as-directed first. And let me just say: AMAZING!!! The only did 2 things differently, I used Smart Balance Spread instead of butter (i try not to use butter or margarine), and I added a pinch of Greek Seasoning. I was afraid this would be too liquidy or too cream cheesy, but after simmering it for a few minutes, it was perfect! My boyfriend and I loved it so much I even froze some to use later! In the future I'd definitely use fresh garlic instead of garlic powder -- if it was this amazing with garlic powder I can't wait to have it with the real deal!!
