Hearty Breakfast Muffins

I am getting ready to try this recipe today. After shredding my zucchini I will wrap it in a paper towel and squeeze some of the moisture out. Hoping that well reduce some of the sogginess some reviewers have complained about. Can't wait!

Homemade Black Bean Veggie Burgers

Easy to make and pretty tasty but next time I will add salt and pepper. I chilled the burgers before cooking which held them together a bit. Next time I will pan fry in a little canola oil and then finish them in the oven. That should help hold them together and give them a bit of crunch.

Pasta Pomodoro

Thought this would be the same old pasta, tomato, basil recipe....but it is amazing how the balsamic vinegar gave it a new flavor! Awesome! My son, the pasta afficionado couldn't get enough. I used 3 TBS of balsamic and had to reduce the tomato saute to thicken the sauce. Used a splash of white wine but will do the 50/50 wine and broth mix next time. Thanks for this delicious and simple recipe!

Overnight Blueberry French Toast

My family and I enjoyed this recipe, but this what I liked and didn't like.....loved making it the night before. My cream cheese didn't melt and stayed in blobs, maybe because it was low fat. Next time I will use just 8 oz and blend it and spread it like other reviewers suggested. I used Italian bread which was good, but I would like to try a whole grain bread to make it a bit healthier. Glad I sprinkled cinnamon over the top before baking, wish I had done it on the bottom layer as well. I LOVED the blueberry syrup! I cut the sugar to 3/4 cup........will make the syrup again, even if just for waffles YUM!

Stephanie's Freezer Spaghetti Sauce

Awesome base recipe! Here's what I did to make it (in my opinion) even better! 1) scored, blanched and peeled the tomatoes first 2) In addition to green pepper, added either crushed red pepper or one, hot pepper, seeds removed. 3) Added a ton of fresh basil instead of dried. 4) added tomato paste early on 5) simmered on low in crock pot for 6 to 7 hours. 6) Used immersion blender to smooth out the sauce some before eating or storing. Grilled Beets in Rosemary Vinegar

The recipe said to grill the beets on high. I found this was too hot as my beets burned in the foil regardless of turning them. I will try again at a lower temp for longer or in the oven as some have suggested.

Strawberry Oatmeal Breakfast Smoothie

I have made this smoothie recipe several times, but I find it a little bland as written. I definitely grind the oats first as recommend by other viewers, but to pump up the flavor, I add a few drops of strawberry extract or even a scoop of frozen juice concentrate.

Roasted Garlic Lemon Broccoli

Made this for dinner last night but combined it with cauliflower. Basic roasting recipe that I have done before but never thought to finish it with a squeeze of lemon. The lemon took it to the next level. DELICIOUS! My husband's favorite....Make sure your florets are substantial in size so they don't disappear or turn to mush when roasting.

Spicy Grilled Shrimp

Made this last night...delicious and if you like spicy you will like this recipe. Followed the marinade exactly and made shish kabobs. I used pineapple to balance the spiciness of the shrimp, along with green peppers and onion which I par cooked in the microwave so they would be more tender. I also tossed the pepper and onions in olive oil and kosher salt before adding them to the skewers. Very pretty too! Will make again!

Banana Pancakes I

Just made these and thought they were very good. I changed the flour to 1/2 cup all purpose flour, 1/4 cup whole wheat flour and 1/4 cup almond meal/flour. I also added 1/4 cup of quick cooking oats. I used 2 small /medium bananas mashed in a bag as suggested and that worked great. Will make again!

Garlic Chicken

I made this last night for my husband and myself and loved it. I gave this 5 stars because of the flavor and ease of making this dish. I used panko bread crumbs, boneless, skinless chicken thighs and after baking, put them under the broiler for a minute to brown them a bit more (they were in a metal baking pan). Will definitely make again!

Spicy Honey-Roasted Chicken

Made this with boneless chicken thighs. Put the thighs in a pan with sauce and covered with foil as recommended. Uncovered it for the last 10 mins of cooking. The honey mixture made a great sauce and pretty presentation. Will make this again! Amazing!
