Eileen's Spicy Gingerbread Men

Pretty good recipe, makes a nice soft cookie. I used 1/2 WW Flour, and it didn't make them too heavy. There are probably better recipes out there, but this is a good basic one.

Fluffy Whole Wheat Biscuits

Great taste...the biscuits were a little crumbly, but a wonderful healthy alternative to white biscuits. The second time I made them, I added a Tbls. of honey instead of sugar.

Pecan Pie Muffins

Delicious!! I had tried the Homemade Gourmet mix and wanted to recreate it from scratch. This recipe was the answer. I used whole wheat flour and sprinkled chocolate chips on top of the 12 muffins. Thanks T's Mom!

Lower Fat Banana Bread I

The loaf bubbled up in the middle and was still doughy while the edges were brown. I ended up scooping the doughy part out and spreading it on top. Then the middle actually turned out to be the best part b/c it was gooey and chocolatey (I added about 1/4 cup cocoa and 1 cup of chocolate chips). Overall, good taste and texture and I'm making it again!

English Royalty Chocolate Chip Scones

I was dubious of orange juice with chocolate chips, but wow, these were wonderful!! The texture is melt-in-your-mouth, and the orangey tang is unique. I measured the 3 tablespoons of juice, but then added enough to make a sticky ball. Fit for royalty indeed!!

Glazed Meatloaf I

Very tasty, indeed! I didn't have any bouillon, so I added some worcestershire sauce and Italian bread crumbs in place of sliced bread. The glaze is the best.

Creamy Banana Bread

Award Winning Soft Chocolate Chip Cookies

I whipped these up for lunch and my Dad pronounced them very good. He gave them 4 1/2 stars. I liked how they were lightly crunchy on the outside and soft on the inside. These are definitely winners!!

Awesome Ham Pasta Salad

I adapted this recipe and it was great! I only used half a green pepper, a handful of pickles, no onions. Also I added some shredded carrots, broccoli, and cucumber, and tomatoes. I used light mayo and sour cream for the dressing and tricolor rotini pasta. My mom and I think it's terrific!! Thanks for a winning recipe

Mocha Chocolate Chip Banana Muffins

I made this in a 9x13 inch cake pan. It turned out great, only like some others said, the coffee taste was over-powered by banana. It still tastes good though and my family is not crazy about coffee anyway. I did add 1 cup of chopped walnuts for a little crunch :-)

Pumpkin Crunch Cake

This was wonderful!! I made it for a Bible study and everyone that tried it liked it. Some even said that it is better than pumpkin pie. It's good leftover, cold and hot. The only thing I did differently was I only used half the butter it called for. It still turned out great!

White Bean Chicken Chili

My daughter made this for us and the whole family loved it. It's great leftover, too. Just add a little cheese, sour cream and lime juice and you have a supurb meal.

Chocolate Zucchini Bread I

What a tasty bread!! My sister made this for Thanksgiving and it was gone in 1 day. Everyone loved it! She did substitute applesauce for most of the oil to make it lower in fat. It was moist and delicious.

Mexican Casserole

To Die For Blueberry Muffins

Thanks for the delicious recipe!! I made a few changes like applesauce instead of oil, honey instead of sugar, and 1/2 cup whole wheat flour. It turned out wonderful!! I also made 12 regular muffins instead of 6 large ones. I'll use this recipe again!

St. Patrick's Day Zucchini-Oatmeal Cookies

These cookies were great!! I made a double batch and used less chocolate chips. My daughter took them to ballet to share with her friends on her birthday (St. Patrick's Day) and everyone loved them!! These cookies are NOT green (I think that's a good thing).

Basic Fruit Smoothie

Delicious recipe! We scaled it down to 2 servings and used frozen strawberries & bananas, orange juice, and a 4oz can of peaches in heavy syrup. We left out the ice. We will make this again.

The Best Lemon Bars

These bars were delicious. I used 5 tablespoons of lemon juice instead of 2 lemons, as someone else who tried these suggested. It worked great! I will definitly make these again.
