About this Cook
I am a single mom of a beautiful 5 yr old girl. I am a youth Counselor/Paralegal by trade, I enjoy cooking if i wasn't into a profession already i'd b a cook by trade. Cooking soothes me, it makes me happy and i am always eager to try new things. I enjoy jogging, reading, playing tennis, and chasing my lil one around.
My favorite things to cook
My favorite things to cook is anything dat says brkfst, i enjy different seafood dishes,and making natural beverages such as carrot mango juice. I'm not very fond of baking sweets that part is a work in progress :-) I am good at cooking anything from the island since i am native Jamaican.
My favorite family cooking traditions
Escovich fish, rice and peas in coconut milk, curry goat or chicken, steam fish stuffed with okra, hard jamaican water crackers, and fresh spinach, brown stewed fish/chicken. Festival..Cornmeal, banana, hominy-corn, plaintain, rice and bulgar porridge. Ackee and saltfish.
My cooking triumphs
My cooking triumphs would have to be all of the above from the fmaily traditions. Red snapper in a mushroon sauce served with bak choi, carrots and okra, Beef stew, Chicken pot pie, hot and spicy sausage,and turkey baked ziti, curried goat, jerk chciken and fish, turkey meatballs and spaghetti, sweet s=dinner rolls.
My cooking tragedies
My cooking tragedy would have to be making cornish hens, or baking chicken..smh..lol

Coconut Rice with Black Beans
In order to get that great flavor u must cook the coconut milk for 45 mins first. I'm from the caribean. I made this small change to the recipe added, salt, escallion, garlic (crushed), butter and thyme. Cook this for an additional 5 mins. while cooking the coconut milk u must add water. It was delicious..
