RWOP Finalist: Breakfast Empanadas with Chipotle Cream

These were really good. I messed up on the sauce. I misread the directions and added 2 CANS of chipotle peppers instead of 2 chipotle peppers. Wow that was spicy!! My fault :-)

Really good crust. I used olive oil instead of vegetable oil, added italian seasoning & garlic powder to the dough and brushed the dough with some butter after pressing it into the pan.

The glaze had a good taste. The only thing that I didn't like was how watery the glaze was. I took the suggestion of another user to use honey and omit the water. The glaze was still not thick....I'll have to try adding something else to the sauce to get the consistency that I like.

Chicken Puffs

Yum. Made a couple of changes...used 4 oz of cream cheese, 4 oz of lite onion & chive cream cheese, 3 tbls of butter, 3 tbls of 98 % fat free cream of chicken soup and used 3 - 5 oz cans of pre-cooked chicken and added shredded mild cheddar cheese. Next time I'm going to try using 6 tbls of lite cream of chicken soup instead of butter and see how that goes.

Banana Bread V

Good banana bread. I only used 2 bananas and really think that 3 would have been better. I also took the recommendation from another user and used 1 tbls of cinnamon and 1 tsp of vanilla extract. 1 tbls of cinnamon really over powered the banana unless you really like cinnamon. I think that I'll use less cinnamon next time or omit it all together. Another user mentioned baking at 325 degrees for 50 minutes and that worked for me. The bread was cooked and moist.

Chicken Chipulos

Very good. This is pretty similar to my mom's chicken enchiladas. I omitted the mushroom soup, added another can of diced green chiles and added celery. I sauteed the celery and onion in butter first and added the cooked chicken to the onion and celery. I then filled each tortilla with the onion, celery, chicken mixture and added a little cheese in each tortilla. I opted to make enchiladas instead of tearing the tortilla into bite sized pieces.
