Lighter Fettuccini Alfredo
No one would EVER guess that this was a lighter alfredo recipe. It came out VERY heavy, I think part of the issue was that the recipe yields about 1/3 more sauce than you need for 12 oz of pasta (something I didn't realize until after I poured the sauce over the fettuccine). The sauce itself was very tasty, but it was too much of something.

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto
The cilantro pesto in this recipe is brilliant, however, I felt the roasted red pepper sauce fell a little flat. I think it may have been the shallot. Also, while the flavors went well together, it can be a little overpowering for such a light fish. It may be best to go with one or the other, preferably the pesto.
