Shrimp Lemon Pepper Linguini

YUMMY!!! I used angel hair pasta, skipped the parsley, cut the butter in half, added fresh cut asparagus, and stirred in fresh parmesan cheese to finish. I also saved a bit of the pasta water before draining in case I needed it for the sauce. Easy and delicious!

Shiitake Mushroom and Cheddar Soup

OUTSTANDING! I followed the recipe to the letter EXCEPT I used chicken stock instead of beef. It pairs much better with sage in my opinion. I also took Shelley's advice and added the cheese via a white sauce I prepared. Super easy and delicious!

Yogurt Biscuits

Superb recipe! I used 1 1/4 cup flour, 2 tablespoons baking powder, 1/2 cup low fat buttermilk, and 1/2 low fat plain yogurt. No sugar or milk. I didn't even use butter or margarine and they still turned out soft and delicious! Instead of kneading the dough, I spooned/dropped the mixture from the bowl to the baking pan. Next time, I'm going to try this with the yogurt and my favorite butter substitute, Olivio Light (great for baking and only 50 cals per tablespoon, girls!). THANK YOU!

Tender Tomato Chicken Breasts

One of the very best recipies I have ever tried on allrecipies! Do yourself a favor and substitute skinless chicken legs and thighs for breasts. The less expensive, but more flavorful parts of the chicken work much better in my opinion. I made this in one pot, browning legs and thighs in olive oil then adding fresh onions and minced garlic. I used 1 can tomato paste and 1 can diced tomatoes & green chilies instead of stewed tomatoes. I REALLY kicked it up a notch with chili powder, cumin, Hungarian sweet paprika, Italian seasoning, garlic powder, and Adobe. I simmered for 45 minutes; served over rice. This dish is easy and all kinds of delicious!

Chicken Tinga Tacos

I sauteed chopped yellow onions before adding the ingredients. I also added a bit of garlic powder and about 1/3 cup of salsa. This dish is nothing spectacular, but IS quick, easy, and yummy! Will make again.

Dietetic Banana Nut Muffins

Not sure how anyone can find fault with this recipe. I didn't have whole wheat flour, so I used regular all-purpose flour and 2 cups of bananas. I also added 2 tablespoons of light brown sugar, walnuts, and dried cranberries. These muffins are AWESOME! Eating one as I type and will definitely make again.

Fluffy Pancakes

Yeah! I made homemade pancakes! I substituted two egg whites for the one egg; used Olivio light spread instead of butter; 1/4 tsp kosher salt; and added a teaspoon of vanilla. Light, fluffy, and delicious!
