I raised three sons, cooking nightly for them. I'm really good at cooking with what's on hand. I try to buy my ingredients fresh and local, getting most of my veggies at the farmer's market. Last year, I became a vegetarian, so have been experimenting with lots of new recipes.
Homemade Black Bean Veggie Burgers
I was leery of using canned beans, since so many reviews said it was more like batter than moldable dough. I soaked my own beans, and cooked them until they were al dente. Then I processed them in a meat grinder. They came out fluffy and easily conformed to patties when used in this recipe. I added an extra egg and an extra 1/4 c. bread crumbs, probably because I used more beans. I ended up with a mix that felt like meatloaf. I baked them, and they were great!
