Beef Tenderloin with Horseradish-and-Roasted Garlic Crust

I made this exactly as written for Christmas Eve, and my family was in heaven! I was concerned that the crust would be too strong (my mother is not a fan of garlic OR horseradish, so was taking a chance), but the roasting process mellows the sharpness & just leaves wonderful flavor. Will double the recipe for the crust next time because my brothers enjoyed it so much.

Ultimate Twice Baked Potatoes

Made them for Christmas Eve and my family loved them - big payback for the small additional effort! Will cook longer next time if using the same size (they were fairly large).

Chicken Cordon Bleu II

Delicious, and easy but impressive! I omitted the chicken bouillon because I didn't have any, and I also removed the chicken from the skillet to a 350-degree oven before making the sauce. After making the sauce on the rangetop, poured over the uncovered chicken and basted a couple of times while it baked. A keeper that will win you rave reviews!

Swiss Green Beans

Delicious - my dinner guests last night loved it! But whoops - I used all 5 T. butter in the sauce and none in the topping. Didn't even realize it until just now :-) Other (purposeful) modifications included: fresh green beans partially cooked and shocked, just breadcrumbs on top of grated cheese, and only 1/2 t. sugar. Will definitely make again, and again, and again...

Aunt Maria's Pudding Cake

This is delicious, simple, & fast - what more could we ask for? Make it in a decorative bundt pan (I use Williams-Sonoma's cathedral pan) with a dusting of confectioner's sugar, and you have a dessert which will stand up in any company. Note: my variation of this recipe uses two boxes of instant pudding, and also includes 1/2 teaspoon nutmeg.

Lemon Bars II

Delicious and easy - I found this one year while baking Christmas cookies when I needed to use up some egg whites, and they have been a huge hit with everyone who tries them. If you like lemon, you'll love these!
