My favorite things to cook
I love to cook fish, chicken and turkey type dishes with an occassional meat dish. Next best is making desserts! I also prepare quite a few casserole dishes.

Mexican Casserole
Ay yay yay!! Made it for a party and it was the first dish to disappear! Everyone's been asking for the recipe. I, like many of the other's before me, ad libbed this recipe. I really don't think you can botch this one up because you can use optional items. I used the 1/2 pkg taco seasoning, flour tortilla shells, small can greeen chilies and 4 oz of sour cream. I added a little of the juices for moisture and started the layering with the meat sauce first and went up from there. I put mine in the crock pot and cooked it slow for about 3 hours, and it was a delicious Mexican dish.

Un-Slimy Okra
I thought it was OK. It wasn't slimy and the flavor was pretty good, but I thought it tasted crunchy and maybe undercooked. We ate some and then I put it in the oven about another 7 min, but it still tasted the same. Some of it was stringy too! So yes, the taste was good but the texture was kind of funky.

Cheesy Baked Salmon
I usually grill or broil the salmon and really wanted to try something different. I must say, this was delicious, and I would certainly make it again for our guests. The combination of the cheddar cheese with the green onions was not as overpowering as I thought it would be. And baking the fish in foil made it tender and flaky. Very different than what I am accustomed to when it's grilled. It melted in my mouth and was just what I was looking for.
