Simple Waldorf Salad
Know it's not a true Waldorf but my husband can't eat walnuts so I always have to substitute with pecans (works for us) However I go a furher step and add a tin of well-drained chunk tuna for a summer lunch that has everything. Nestled into a lettuce leaf it's a full meal and my family and friends thinks it's great. As I say not a true Waldorf but if you want a meal that pleases and has a great taste try it.

Cowboy Casserole
This is a recipe I've been looking for for ages. Used to make it all the time when camping but it got lost as the years went on. Wonderful to see it again. I think it makes a quick lunch and is something everyone can enjoy when the kids drop in unexpectedly. I like this best pit in a casserole with biscuits on top and baked at 350 for about 20-30 minutes. Biscuits are browned and crispy. I sprinkle a handful of shredded cheese over the biscuits usually. MMMMMM

Quick Oatmeal Pancakes
I've been searching for the recipe for ages. Used to make it all the time and lost it. Have tried others but they're not as good. It's a great way to get oatmeal into something fun to eat and it's filling too.
