Chocolate Zucchini Cake III

Reviewed: Aug. 30, 2012
I was looking for something fast and easy dessert to make with the ingredients that I had on hand which included a big zucchini from the garden. Wow, did I ever find it! This cake was awesome...wonderful flavor, super moist and no need for frosting. I just sprinkled a little powdered sugar on it after it had cooled. I served it with ice cream and some Sander's hot fudge (if you're from Michigan, you know how yummy that is) and it was a hit! This cake also was a great conversation piece with trying to guess the "secret" ingredient. By the way -- I didn't change a thing. The recipe was perfect.

Croutons

Reviewed: May 2, 2011
Great basic recipe and very easy. I used very dense bakery wheat bread cut up into cubes with crust and placed in large bowl. I melted 1/2 cup butter, poured over bread crumbs and tossed. I also added Kirkland's (Costco) Rustic Tuscany Seasoning to taste. Baked as recipe said and....yummy!

Soft Oatmeal Cookies

Reviewed: Feb. 4, 2011
These cookies are the best! I can see these quickly becoming a family favorite! I divided the dough and baked some with butterscotch chips added and some without. Both are outstanding! Next time I'll try chocolate chips, dried cranberries and/or nuts just for fun.

White Bean and Lamb Soup

Reviewed: Oct. 4, 2010
Love this soup -- both hearty and delicious! The only thing I changed is that I used a couple of cans of great northern beans rather than going through the trouble of using dried beans. Oh -- I also used 2 lbs of lamb but that's not necessary.

Salsa Chicken

Reviewed: Feb. 8, 2010
Yummy! This is a new family favorite. I doubled the recipe (baked same amount of time) but only used half the cheese to cut down on fat. Really great!

Chicken Scarpariello

Reviewed: Apr. 9, 2009
This was great! My whole family loved it. I served it with whole wheat pasta and a salad. I made the recipe exactly as is except I added some capers. They are not necessary but I had them and thought I would just add them. Next time I think I will also add some sauted mushrooms. Neither the capers or the mushrooms are necessary...just personal favorites. The recipe is excellent on its own.

The Best Vegetarian Chili in the World

Reviewed: Apr. 9, 2009
My daughter turned me on to this recipe and I just love it. I love old fashioned chili with meat...but this vegetarian chili has stepped up to being my favorite. The only thing I do different is I only use one jalapeno pepper. But, that's just a personal choice. Our whole family enjoys this recipe. Thanks for sharing it.

Chris's Incredible Italian Turkey Meatloaf

Reviewed: Nov. 18, 2008
I made this exact to the recipe and it was fabulous! I kept sneaking pieces of it the next day -- had to stop so I'd have enough for a second dinner for the family. Makes great cold meatloaf sandwiches, too. Thanks so much for sharing this recipe!

Banana Cake VI

Reviewed: Oct. 1, 2008
This really is the best banana cake that I have ever made -- or ever had! It was super moist and yet not heavy. I kept it refrigerated. My family agreed that it was even better on the second day. It did take 1 hour and 20 minutes to bake. Also, I cut the icing directions in half (added a little bit extra cream cheese) and had plenty of icing. I see think this will be one of those recipes that gets past down through the family -- it is that good!

Swiss Chicken Casserole I

Reviewed: Sep. 9, 2008
I made this recipe to take to a friend who was taking care of a sick loved one and didn't have time to cook for her family...it went over big! Actually, I made two -- one for our family, too. Very easy and tasty. This would be a great recipe to throw together in the morning before you go to work and then throw in the oven when you get home. Didn't change a thing.

Grilled Lemon Chicken

Reviewed: Aug. 20, 2008
Wonderful recipe! I'm sure this will become a family favorite. The only thing that I did different was not add the red pepper...I didn't have any. Other than that, I made the recipe as written. I'm not sure why some reviewers said it didn't have enough flavor. I love flavorful food and I thought this was excellent. The marinade enhanced the chicken without overpowering. It was just right.

Artichoke Chicken

Reviewed: May 21, 2008
This recipe was not a favorite for our family. The chicken was moist but the overall dish was not very flavorful. It might just be a matter of taste. Our family may just like foods with more seasoning and spices.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Apr. 22, 2008
This recipe is excellent! After 35 years of roasting chickens, this is by far my favorite recipe. I have made it twice and have had great reviews and raves from family and friends. Like other reviewers, I did not slow roast but put the chickens in at 325 for two hours. (I did apply the rub to the chickens, stuffed them with the onions and refrigerated them in ziploc bags for 6 hours prior to baking). When baked, the meat fell off of the bones and was very moist. One of these days I will try the slow-roast method. This is a great and easy dish to serve to guests.

Grandmother's Buttermilk Cornbread

Reviewed: Feb. 29, 2008
Excellent cornbread that my family enjoys over and over again! I love recipes where you don't have to change a thing and this is one of them. My family is from the South and my grandma put sugar in her cornbread...this tastes very similar! Thanks for a great recipe.

Frozen Crescent Rolls

Reviewed: Apr. 6, 2007
I served these rolls for Christmas and they were wonderful...tasty and convenient. I like that they are made ahead of time and then set out the day of to rise and bake. How great is that? I also made cinnamon rolls with the basic recipe. Instead of rolling and cutting for crescent rolls, I rolled the dough into a rectangle, brushed with some melted butter and sprinkled brown sugar, cinnamon, a bit of nutmeg and raisins on the dough. I then rolled up from the long side (creating a log) and then cut the rolls from the log every inch or so. From there I just followed the rest of the recipe. Great! I will make again for Easter.

Banana Banana Bread

Reviewed: Nov. 18, 2006
My daughter just made this bread and it was really good. Not too sweet, nice texture and not "oily" like other banana breads. I wouldn't change a thing. This is a keeper. Only problem is my daughter gave me two pieces and took the rest with her back to school. Sigh!

Quick and Easy Ham with Sweet Potatoes

Reviewed: Oct. 19, 2006
I never rate a recipe unless I have made it exactly to the directions given. I get very annoyed when someone gives a poor review after they have altered the recipe. With this recipe, I really wanted to love it -- but all I can say is that is was pretty good. Some good points are it is quick and easy to put together and quick for clean up. It is great for a fast meal after a long day of work. I think next time I might try pineapple chunks or manderin oranges. I didn't care for the crushed pineapple. My husband liked it so I will make again.

Apple Pork Chops

Reviewed: Oct. 15, 2004
I would not make this again. The flavor was bland, chops were dry and the sauce was far too watery. I prepared the recipe exactly as written. I guess I should have followed all of the other suggestions, however, by the time I go through that, I might as well search for another recipe.

Honey Bun Cake I

Reviewed: Mar. 1, 2004
I don't have a clue what a honeybun is but this recipe sounded so good I had to try it. How fabulous! It is so quick and easy to make, too. This will be my new standard! Don't get discouraged when you are adding the second half of the batter over the brown sugar/cinnamon mixture. It didn't seem like I had enough to cover but I just kept working at it. Remember that you are to run a knife through the batter anyway so don't worry how it looks. Also, my cake caved in a bit while baking -- trust me -- it didn't matter to those who gobbled it up! I thought 1 tablespoon of vanilla sounded like too much for the frosting but after the cake sat and cooled a bit, it tasted just perfect. Thanks!
