Baked Beans, Texas Ranger

This recipe is great. I made this for a church picnic and while it was easy to cook on a large scale it still turned out well. I did make a few little changes including: using bacon instead of sausage, skipping the bell pepper, using a red onion, and adding some extra spices and a little whiskey as the beans slow cooked. There ya go pilgrim!

The Best Mashed Potatoes

Not bad as far as mashed potatoes go but I thought this recipe left them fairly dry and heavy; countered with milk and sour cream but it took a lot before I got anywhere.

New England Potato Soup

I have been making this recipe since 2008 when I thought that it would be a great way to counter subzero New England temperatures; and may I say it works incredibly well at that. This has been one of my favorite soups and an instant favorite for many friends over the past few years. The only alteration I've ever made is to used either fresh or defrosted broccoli instead of peas since it adds a little more bulk to the soup (plus I'm just not a fan of ham and peas).

Spicy Avocado Chicken

This is an absolutely fantastic recipe with a cool start and a spicy finish! The combination of heat from the cayenne and the spice from the black pepper and salt are rounded out perfectly by the coolness of the avocado, lime juice, and red onion. Round that out with perfectly cooked chicken and this entree is a real winner. Note: as I remember, the recipe is non-specific as to whether or not the avocado, lime juice, red onion sauce should be hot or cold I served it cold over the cooked chicken which seemed to further reduce the heat from the cayenne.

Grandma's Green Bean Casserole

This was a fantastic recipe. I made this for Thanksgiving dinner and it was shared among 5 people, the whole dish nearly disappeared and it was highly complimented (take that turkey)!
