Frank's Favorite Slow-Cooker Thai Chicken

This was delicious! The only changes (and they were minor) I made were to use boneless chicken thighs, mild salsa and creamy peanut butter since that's what I had on hand. I was skeptical of the seemingly odd combo of flavors -- salsa, peanut butter, lime juice, etc -- but the result was very tasty!

Grilled Fish Tacos with Chipotle-Lime Dressing

This is a delicious combination of flavors! Other than cutting back the amount of adobo sauce in the dressing, I following the recipe exactly. We can't wait to try it again!

Garlic Bread Fantastique

Delicious!! We were grilling out, so I followed the recipe almost exactly (I used low-fat mayo and forgot to top with Parmesan) and then wrapped the loaf of bread in foil and threw it on the grill for about 10 minutes. Yum!

Rhubarb and Strawberry Pie

I'd had high hopes for this recipe, but I was sorely disappointed by the results. I followed the directions exactly (except I followed others' advice to use a lattice crust on top to let the steam esccape). I ended up with strawberry-rhubarb soup in a crust! It did have a good flavor, but the consistency was definitely not up to par.

Flat Iron, Grilled

We've used this recipe numerous times. It makes a delicious flat iron steak! The only change we make is in the cooking method. We still sear the steak on each side. But instead of moving it to the oven, we turn down the heat on the grill to about medium and cook for an additional 4-6 minutes on each side.

Sangria! Sangria!

I just made this for a party over the weekend. It was very easy to make, and everyone loved it. I started with a double batch and ended up having to make another batch during the party because it went so quickly. I followed the suggestion of others and omitted the sugar and used diet Sprite instead of club soda.

Chicken Breast Cutlets with Artichokes and Capers

I just made this last night, and my husband and I agree it's our new favorite. It was so easy and delicious! It was great for a weeknight dinner. It'd also be a tasty dish for company. I followed the recipe exactly. The sauce didn't thicken up enough so I added a little cornstarch (mixed in cold water, of course). I served it with brown rice. Next time I'd like to try it with pasta.

Ham and Brussels Sprout Bake

I'm not a fan of Brussels sprouts but my husband likes them so I've been trying new recipes. We both really liked this one! In fact, I've made this dish twice in the past three weeks. It's very flavorful and baking the sprouts with the ham, olive oil and herbs tones down their flavor.

Fabulous Orange Cake

This cake is awesome! I've made it a few times and it's gotten rave reviews every time. It is very moist, has a great flavor and is extremely easy to make. No need for icing -- just dust with some powdered sugar. Delicious!

Hot Chicken Salad Casserole

Delicious and very easy!! I sprinkled the chicken with garlic powder, salt and pepper before cooking it on the stove in olive oil. I substituted cream of mushroom soup for the mayonnaise and canned mushrooms. My boyfriend and I are usually not big on leftovers, but we ate this dish for dinner, then lunch and dinner the next day and were sad to see it gone. Will definitely make this again!

Salmon with Tomatoes

This recipe is delicious!!! And very easy. The grocery's tomatoes didn't look very good, so I used a can of diced tomatoes with chiles. I served it over pasta with a Caesar salad on the side. Yummy!
