Eileen's Spicy Gingerbread Men

I give these three stars only because I loved how they made my kitchen smell. Unfortunately, after a long time in the fridge, the dough was still way too sticky to roll out. I had to plop the whole mess back into the bowl to add about 1/2 cup more flour. The cookies were extremely spicy (although my 8 year old loved the dough). Hubby, who usually is pretty tough, needed a glass of water after eating half a cookie. I thought they were way too salty. Even so, the kids and I had a fun time rolling them out and baking them, and will be frosting them today. I suspect they will be better after the spiciness is cut a bit with the frosting. Thanks, though!

Mom's Zucchini Pie

Awesome awesome awesome. I like to use more eggs in a 9x13 for a more quiche-like casserole, but the base ingredients are right on. Everyone LOVES and requests this meal from me. One of my staples...

My Big Fat Greek Omelet

Wow! The flavor of this omelet was delicious, and I didn't change a thing except to use a basil/tomato feta cheese. I have never cooked eggs very well, but I would say with these instructions, I made a really great omelet! Thanks for the recipe -- it will stay in my recipe book.

Pesto Pasta with Chicken

This was a good base meal, but requires a lot of doctoring up to make this really good. As is, the recipe isn't as flavorful as we like. We had to add some more garlic, and I think I will reheat the leftovers with a lot of parmesan cheese added, and maybe some chopped tomatoes.

Strawberry Chocolate Mousse Cake

MMMM!!!! This cake turned out really well! Hubby doesn't like the cake-y type cakes, so this one was right up his alley. The blend of intense chocolate flavor mixed with fresh strawberries is divine, and I wasn't even that thrilled with the quality of the strawberries I used. It presented nicely with the ring of strawberries around it, and the homemade whipped cream set it off perfectly, not being too sweet, but full of real cream flavor. (Do not use canned...it will only insult this yummy cake!) I would agree with a previous reviewer about not giving it to your children before bedtime...bounce, bounce, bounce....lol

Ricotta Cookies III

The raw dough was the best part of the recipe...I couldn't stop snitching spoonfuls with that great ricotta flavor! I added grated lemon peel to the dough, which enhanced the flavor a lot. The cookies were a tad less exciting in comparison, but still good. They formed well with my mini ice cream scoop, and looked perfect when they came out of my oven after exactly 13 minutes. I think the glaze does taste very powdered-sugary. I agree that this is a huge batch of cookies and I spent way more time than I wanted to in my kitchen, and after the mess I made on my counter with the glaze, I might hesitate to make these again. I did enjoy doing something different, departing from the good old chocolate chip cookie recipe, as I needed to use some leftover ricotta. These are actually really better the next day, I think!

Brenda 's Lasagna

This was a very good, basic lasagna and it was very easy! I will add it to my list of "regulars". I did have to alter it a bit, though. There is no way 16 oz of spagetti sauce is enough. Like others, I had to put it 1.5 regular jars of spagetti sauce in the meat mixture. I also didn't have cheddar, but made do with mozzerrella, and it was still pretty tasty. Had a little trouble spreading the ricotta, but maybe it was just a layering error on my part. Anyway, we really liked it when it was done!

Apple Spice Cake

We really liked this cake, and my husband is not a cake person. I used a cream cheese frosting, and it complimented it well. There are a couple things about it that I would have to mention. There are almost too many apples in it. When put in the refrigerator overnight, the flavors melded beautifully, but the texture was a little mushy. Maybe it was the kind of apple I used...? I also baked it in a 9x13, rather than a tube pan. It still came out fine. All in all, a very good cake!

Jo's Rosemary Bread

This was a really AWESOME bread! I was craving Macaroni Grill's bread, and I thought I could put my new breadmaker to use! I used fresh rosemary, and it came out divine...perfect for ripping up and dipping in balsamic vinegar and olive oil! The bread doesn't keep very well, and the crust was tougher after a day, but make this for dinner one night, and it should be gone anyway!

Chocolate Chip Pumpkin Bread

I thought this bread was very good. I love the combination of pumpkin and chocolate. In fact, I think it could have used more chocolate, and next time I make this, I will use regular chocolate chips instead of the minis. I gave this away for Christmas presents, and I didn't change the recipe a bit. I WILL say that I didn't get many compliments on the bread...I think it might not be a mainstream taste. Oh well!!!

Double Tomato Bruschetta

I really liked the fresh tomatoes (from my garden) and basil in this bruschetta, but I would have to tweak it a little next time to suit us. I think the vinegar overwhelmed the taste of the tomatoes quite a bit, and the bread was soggy from the mixture. I would decrease the amount of vinegar, and cut the pieces of bread a little thicker and toast both sides. I think I may keep searching for the perfect recipe...my favorite bruschetta is made by UNO's restauraunts, based out of Chigaco. MMMMM!!! Actually, I think it is called Tuscany bread...

Chicken Pasta I

This was a great basic recipe! I liked the flavor and if this is light eating, than I am thrilled! However, I would have changed a couple of things. It definitely needs more mushrooms -- three is nowhere near enough! Less chicken, more pasta, and more diced tomatoes. Also, real grated parmesean makes this dish great! I will be making this one again!

Tar Heel Pie

This was a very good dessert, yet it was extremely rich. Intensely chocolatey, chewy texture -- you definitely need something like ice cream or homemade whipped cream to cut the sweetness down. I couldn't even finish one regular sized piece... (and I ALWAYS finish desserts!) My husband said it best: "You like it, yet... it's oppressive!" I would consider making this again when I really need a chocolate fix. It would DEFINITELY take care of it! Thanks for the new recipe!

Baked Salmon Fillets Dijon

LOVE THIS RECIPE!!! I have made this several times and I love how easy it is and the taste is wonderful! My husband loves it and so does my two year-old, which says a lot! We are not usually fish eaters, leaning more on the pizza and hamburger side, and this recipe helps us realize that eating healthy can be really tasty!

Pot Roast in Foil

This recipe is a good basic recipe, but I like my slow cooker recipe better. I had never made a roast before using this recipe, and I guess I should have browned it in oil first (mom's advice too late) and the roast turned out too dry and looked grey. It had a good taste, so it would probably be fine with some tweaking.

Banana Bread V

This was a very decent recipe. The bread was nice and moist, and I am sure my husband will absolutely inhale the rest of it! It is a little saltier than what I am used to, if that is possible -- the recipe didn't call for much. So I am confused! But overall, a good banana bread. I think I will try out a few more recipes, though.

Old Fashioned Fudge Cookies

I was actually really disappointed with this recipe...sorry! I followed it very carefully, but I knew as soon as I tasted the dough that these were not going to be very good. I even rolled them in sugar before flattening to see if the taste would improve, but when they came out of the oven, the cookies were extremely dry and the texture was even a bit sandy....maybe from the rolled sugar? Maybe using semi-sweetened chocolate would help, but I won't be trying these again. I'll use up my chocolate calories elsewhere...

Chicken Enchilada Casserole II

I actually liked this dish better as leftovers. It was a little too soupy for the first round, but after being refrigerated, it firmed up. The taste was a lot better after a few days, also. I did cook the chicken in the taco seasoning first, as other reviewers has suggested. I also added half a 4 oz. can of chopped green chiles in the sour cream mixture -- just enough to give it a little something extra. My husband liked it -- he said it wasn't phenomenal, but a good casserole overall. He even made those "Mmmmmm...." noises for me! I will probably make it again, since it was so easy, but I will make it a day or so ahead of time for the best results.

Cranberry Crunch Squares

Sorry, but this recipe did not turn out for me. It was really too greasy and buttery -- 1 cup of butter is waaaaay too much. The melted butter just kind of welled up on the sides. It didn't cut into squares -- it just crumbled, even after following advice of other reviewers. Maybe I will try heating it up and serving with ice cream. (edited to add: Nope! It has been in my refrigerator for a looong time now, and I think its time to toss it. Yucko.)

Soft Chocolate Chip Cookies II

These were really, really good. Be sure to watch them in the oven, or they won't turn out as soft. But they are great either way!! The salt does need to be increased to 1/2 tsp, though. Otherwise, perfect!
