Egg-free Brownies

WOW! I had no idea it was even possible to make egg-free brownies, let alone ones that were so good!! I halved the recipe, but kept the same chocolate amount as the original called for. I also threw in the walnuts, as well as a bit of chili powder. Needless to say, these brownies were all gone in less than 24 hours. (Much of that was my own doing, I must admit!) Thank you for sharing this great recipe. I will definitely use in the future.

Annie's Fruit Salsa and Cinnamon Chips

I have made this multiple times, and everyone always loves it. Super easy to make. The first time I made it exactly according to the recipe. the second time I didn't use kiwis (as I forgot the recipe when I went to the store!), but used blackberries instead. Also, I skipped the added sugar the second time around and it still turned out wonderful. I used raspberry preserves both times. Yum yum yum!!

Easy Sugar Cookies

Delicious dough, but I would not recommend these cookies for rolled out/cookie cutter cookies. I popped the batter into the freezer to make it easier to work with, and still after nearly an hour, the dough was barely workable. The only way I was able to make cutouts that remained in the cutter or that I was easily able to carry over to my baking tray was if I left the dough rather thick. This backlashed on me, and caused enormous cookies (not bad for everyone-- they just looked weird in the cutter I had). When I could see the cookies weren't turning out the right way I wanted, I decided just to roll the remaining dough into balls. So I guess I could take the blame for trying to use this recipe for cutout cookies, since the creator of this recipe didn't specifically recommend to use this for cutouts.... On the plus side, the taste was fantastic! Very sweet, but that's how I like my sugar cookies.

Turned out great! Good taste even without frosting/sprinkles. Took the advice of another reviewer and froze for 20 minutes to make cutouts. Will definitely keep this recipe. :)

Christmas Punch

Pretty decent drink. I didn't have any triple sec, and didn't want to buy a whole bottle just to use a shot, so I used the peach schnapps I had in the house instead. Also, I thought there would be enough sweetness from the juices and the fruit, that initially I did not add the sugar. I mixed everything together-- without the sugar-- and it was on the tart side. I added the sugar, and I thought it was a good balance-- Not overly sweet, and not too tart. Initially, I didn't know how strong the drink would be, so I only added half of the 750mL of rum. I mixed it in, and I couldn't taste the rum at all, so I added the rest of the bottle in. The taste was pretty good, although I would've preferred it less lemon tasting, and more orange and pineapple. So maybe next time I would add a cup or two of pineapple juice, and reduce the lemon juice by 1/3 c. I made this punch to share with some friends, and they all liked it a lot. Not my personal favorite drink, but still pretty good and easy to make.

Pumpkin Spice Cupcakes

I followed the recipe exactly and they were perfect! Baking time of 25 minutes was absolutely right. I thought there was the perfect amount of spices-- it wasn't overpowering, but still very flavorful and delicious. I also liked that the batter was a bit on the thicker side, which made me less likely to spill it while filling up the cupcake trays. (I'm a bit accident prone, haha.) Wonderful cupcakes and fairly easy to make. I highly recommend!!

Double Layer Pumpkin Cheesecake

This dessert was amazing! It was the perfect combination of cheesecake and pumpkin. Easy to make and a definite crowd pleaser. I am planning on making this into a cupcake version for two different get togethers this weekend...that's how much I loved this receipe!

Easy Mexican Rice

Amazing, easy, and delicious!! Perfect combination of all ingredients. I didn't add any salt or pepper, and it tasted great. Only thing I would change would be to add more lettuce. I hardly could taste/feel the texture of it; could use maybe 1/2 cup more to get more crunch. Very filling rice. We used it as a side dish, but if you have enough of it, you could enjoy as a full meal. So good!!! And you know if I didn't mess it up, it's a very easy dish! :)

Easy Spicy Mexican-American Chicken

This recipe turned out pretty good. I was happy with the amount of spice-- made my lips burn a bit, so that was great! I expected the spicy sauce to penetrate the chicken a bit more (if I have cooked more chicken in the past, I probably would've known not to expect this), but it turned out to just coat the skin. I might make it again, although I'd be interested in getting the sauce to penetrate the chicken some more. Made it for my husband and a couple friends and they loved it!
