Heirloom Blueberry Cake

My 7 year old loves blueberries and requested a blueberry cake for her birthday. I found this recipe and decided to try it out. I made it as written and it was WONDERFUL. I was a bit worried because the batter was so thick, but it was perfect! I used two 9" round cake pans to make a layered cake. I made cream cheese frosting to frost the cake. Great recipe. I will definitely be making this cake again!

Easy Chicken Taquitos

YUM! In addition to the canned chicken and cheese, I added a can of diced green chiles and some taco seasoning. I also used flour tortillas instead of the corn. After they were rolled up, I sprayed them with Pam and then sprinkled more taco seasoning on the taquitos. The best part was that I actually made these the day before my party, then the night of the party, just popped them in the oven on low for a while and they were warmed perfectly and still nice and crisp. I served with salsa and sour cream, but they were wonderful on their own. I can't wait to make them again!

Cucumber Sandwiches III

I followed the recipe as written, except that I used a mini sliced loaf of rye bread. Everything else was perfect! They are so pretty and elegant looking on a plate.

Pickle Rolls

These were great! I have made lots of variations of the "tortilla roll up" and have done the pickle/cream cheese/beef rolls, so this was a nice blend, and easier to make. I did some with ham and some with turkey. I added a bit of ranch dressing mix to the cream cheese. Perfect!

Classic Spanish Sangria

4.5 Stars! I love this drink and can't wait to make it again. I doubled the original recipe for a party. I used blackberry wine as others suggested, but still added a bit of sugar. I didn't use quite as much rum (I used Cpt Morgan) since I had some older ladies who were worried about too much booze. I also had 7up on the side if anyone wanted to make a spritzer. For fruit, I used a whole lemon, 1 orange, half of an apple and a half of a can of pineapple with the juice. We actually ended up with leftover fruit, so next time I might not add as much. The drink would be great without it!

Cabbage Sloppy Joes

These are FANTASTIC! I have 3 small girls who would normally freak out if I served them cabbage. Not only did they have no idea, but they all had second helpings! I did leave out the onion and celery and threw in some more cabbage to make up the difference. I added onion powder and celery seed instead.

Cabbage Rolls II

Not only was this the first time making stuffed cabbage, it was my first time eating it as well. It was a hit! I made it as directed except I did have to double the sauce. I don't know how it would work if you didn't double it. Seemed like it covered everything perfectly doubled. I baked mine at 375 for about 45 min.

Fluffy French Toast

Holy cows this was good! I was skeptical about adding flour to the egg/milk mix, but it was amazing how rich it made the french toast. I usually like to use texas toast when making french toast, but this time I only had ordinary sandwich bread in the house and it was great. It fluffed right up and didn't get soggy or gooey in the middle. Yum!

Baja Grilled Chicken Wrap

These were amazing! Instead of the ranch dressing, I mixed a bit of ranch dressing mix in with the sour cream (I used lite) and then added another 1/4 cup of sour cream. The entire family loved it (tho I had to make a couple cabbage free version for the kids). It was so quick and easy. I can't wait to make it again.

Greek Garbanzo Bean Salad

This is my new favorite salad. Anything with feta has me excited, but this is the perfect blend of beans, veggies, cheese and dressing. The olives make it the best! I made it exactly as written except that I used a Greek vinaigrette dressing as others recommended. Also, this salad kept very well. I made it on a Sunday morning and ate the last of it Wed night. It was only a tiny bit watery. This salad is going to be a staple in our summer cook outs!

Reuben Soup

I LOVED this soup! I was a little hesitant. Though I love reuben sandwiches, the idea of sauerkraut in soup kind of grossed me out, but it was SO GOOD. It tasted just like a reuben sandwich. I made it as written, except I used celery salt instead of celery and I only used 2 T of butter, then just tossed a couple T of flour until it made a paste with the butter. Instead of all half and half, I used 1.5 cups of fat free half and half and a can of fat free evaporated milk. For the beef, I used left over corned beef from St. Pat's day. I can't wait to make it again!

Mexican Goulash

This is a great recipe! It is one of the few recipes that my entire family will eat. I don't always keep Velveeta on hand, so I have used cream cheese and a bit of shredded cheddar in place. Still yummy, cheesy and creamy!

Irish Brown Soda Bread

This was the easiest bread I have ever made! I did not have wheat flour, so I only used white. I had to add an extra 1/3 cup of flour or so because the dough was super sticky. Other than that, I used the recipe as written.

Cheesy Ranch Chex® Mix

LOVE this snack mix, but it is impossible to quit eating! Instead of regular ranch mix, I use the southwest ranch mix. It gives it a little kick. I have also made it with original ranch, but added chili powder and cumin. I usually add a handful or 2 of peanuts as well.

Peach Cobbler Dump Cake I

Slow-Cooked Corn Chowder

I was not crazy about this soup. I don't care for creamed corn, but I thought mixed together it would be Ok. It still tasted like the canned stuff. I added a cup of chicken broth to thin it a bit, and it helped a bit. If I make it again, I won't use creamed corn, just frozen corn and I will use southern hashbrowns instead of the shredded kind. The shredded kind almost dissolved in the soup.

Jalapeno Popper Spread

This was such an easy dip! Plus it tasted so good! It makes a huge batch, which is good because it goes really fast. I didn't change anything, but I'd like to try it with the bread crumbs and parm mixed on top. It was wonderful as written too!
