Lemon Glazed Cake

The cake was good but just Several differant things that I think will make it more moist next time is to use Pillsbury cake instead of Duncan Hines. Also, I didn't use all of the glaze, only about half and next time I will use most of it if not all of it. I made the cake with lemon pudding instead as was recommended and only needed to bake it for 39-40 minutes instead of 45 minutes. The glaze was very good. As one member recommended, I added 1 TSP of pure vanilla extract and a little lemon zest to the glaze. At first I kept out the water (as so many recommended) but the glaze was super thick (I didn't measure how much powdered sugar I put in but more than the recipe called for) so I ended up adding a little water so the glaze would run in the holes. The cake was delicious and I think with those few changes to make next time, it will be perfect!

Salsa Chicken

I came home later than expected in the afternoon and had some chicken on the cupboard thawed and had no idea what I was going to make with it. I quickly got on allrecipes.com and this recipe popped up. It was delish! I basically poured on the taco seasoning and poured on the salsa. I made regular brown rice ( had no mexican rice on hand) and seasoned it with salt, pepper, onion powder, and garlic powder. I sauted onions and a green pepper in butter and mixed it in the rice.I served the chicken on top. The dish was so flavorful! Definitly a keeper!

Best Chocolate Chip Cookies

This was an exceptional chocolate chip cookie recipe. It was SOOO easy and the cookies came out perfect.AND I am not a natural at baking. I took the suggestions of doing a 1/2 cup of white sugar and 1 1/2 cups of brown sugar to make them more chewy. I also did not dissolve the baking soda in hot water as recipe says and cookies came out tasting and looking perfect....with the cracks on top. ;) I also made the cookie size small so as not to be too cakey (from the suggestions) Oh there were some suggestions to add a little extra salt so I did ( a few pinches) I will not do that next time. I think the amount of salt this calls for is perfect! GREAT Recipe! WIll be my main chocolate chip cookie recipe!!!

Fast Creamy Tomato Penne

My family really enjoyed this. It is a form of lasagna to me. I did make a few changes. I had a 14 oz jar of pizza sauce that I mixed with the spaghetti sauce. I also added 3 cloves (minced) of garlic with the onion and butter. I had no green pepper on hand. The garlic really added flavor. And I did not have pork so I used ground beef. I also added some oregano and garlic powder for more italian flavoring. (I had no italian seasoning on hand.) I added mozzerella and parmesan towards the end. It was easy, flavorful, delicious, and makes great leftovers!

Jimmy's Mexican Pizza

This turned out great and only because of the suggestions of everyone on here. The best thing I did that made this recipe great per suggestions was brush the tortillas with olive oil and stick them in the oven for approx 5-6 minutes at 400 degrees to crisp the tortillas. I also sauteed the onion and 2 (instead of 1) cloves of garlic. I did all the seasonings the recipe asked for and did everything else per recipe. The family really enjoyed it. I would definetly make this again!

Roasted Sweet Potatoes & Onions

This recipe was delicious! I didn't have the liquor or the sliced almonds and it was still so tasty. I added oregano and a little cinnamon along with the other spices.It smells wonderful in the oven. The sweet potatoes with the onions was a perfect combination. Definitly a keeper!

Fast and Delicious Black Bean Soup

Tonight was the first time I made black bean soup and this recipe did not disapoint! I took most of the suggestions and added a carrot to make 2, had 4 cloves of garlic instead of 3, I had a red bell pepper instead of a green, and along with 2 cans of black beans, I added a can of refried black beans and along with cumin added ceyenne pepper and red pepper flakes. Made a wonderful spicy kick. I had no ham on hand. I pureed most of the soup so it would look more appealing to my kids.I just had my kids add sour cream and cheese to over-ride the spice. This is definitly a keeper!

Chicken and Corn Chili

This was great and my family raved about it! I made a few changes. I used 3 cloves of garlic instead of garlic powder, I added about 2 tablespoons of chopped white onion. I had no pinto beans so I used 1 can of black beans and 1 can of garbonzo beans. I added a can of tomatoes and used all the spices it calls for plus cayenne pepper for more kick. I had no corn on hand but it was not noticed. The wonderful thing is the chicken basically shreds by itself once in the crock pot for 6-8 hours so that step was skipped.It was great because I used it as soup but my family put it in a tortilla for chicken burritoes and topped it with sour cream, lettuce, and salsa. WONDERFUL recipe. Thank you for sharing!

It's Chili by George!!

I make chili alot (1 particular recipe) but my husband likes this one better and my children really liked it. I usually make a sweet chili that I grew on but this one got high raves by my husband. I took most the suggestions and they were great. I actually only used 1 Ib of hamburger instead of 2 simply because I didn't want to use up that much meat for 1 meal. It was still very meaty. I sauted 1 1/2 cups of mixed white and red onion (it's what I had on hand)in olive oil and added 4 cloves of garlic in the saute. I never used the tomato juice. I only put 2 cans of tomato sauce in and it was perfect. Not too juicy and not too meaty. I did not have pinto beans so I put in 2 cans of kidney beans instead. I also had no green pepper but added a can of diced tomatoes. Per suggestions, I used brown sugar instead of white. I prob. doubled up on all my seasonings. We like things tasty and with a kick so I especially added the cayenne pepper. I served with soup crackers, cheese, and sour cream. I used the crock pot and the flavors mixed so well together. The house smelled wonderful. SUPER easy and will prob. now make this my main chili recipe. THANK YOU GEORGE!

Slow Cooker BBQ Chicken

This was simply delicious. I did make a suggested change because of the amount of reviews stating how sweet the sauce was even after cutting the syrup down to 1/4 cup. So I only added a pinch of syrup. You could prob. cut the syrup out altogether but the sauce was just right....not too sweet, not too tangy. (although I really like tang.) I also added about 1/2 a chopped onion to the sauce. Also, it came apart in the crockpot so easily. The recipe came out wonderful. A definite keeper!

Easy, Sweet Cornbread Muffins

This recipe definitly is better than just a plain box of cornbread, however, I can't say it was a hit with anybody.I did not make them muffins and next time I will. I made them in 2 small loaf pans. I substituted sour cream (did not have it on hand) for cottage cheese and did not add the white sugar as suggested that it is too sweet with it. When making boxed cornbread in the past, I just add half a can of creamed corn and it is just as moist. Just a thought.

Uncle Bill's Chicken Strips

The first time I made this recipe, it was pretty tasteless. I also did not have parmesan on hand so I put in different cheese which I'm sure changed the taste a little but still would've been bland. It needed a whole lot more seasonings and with that being said,it has much potential. The second time around, my family raved about it. I used a seasoned bread crumb mixed with penko bread crumbs. I did have parmesan this time and I added seasoning like ceyenne pepper, cumin, chili powder, and more salt and pepper than called for. I also added a 1-2 dashes of hot pepper sauce in the egg mixture. It wasn't too much because my children who can be picky about spice said nothing about it being spicy but it definitly added that little kick. I baked the chicken then broiled themfor a few minutes to add that crunch. Was a hit the 2nd time around. Just needed more seasoning.

Cheesy Amish Breakfast Casserole

I was put in charge of the teacher Christmas appreciation breakfast which I had never done before and I have tons of amish relatives so when I saw the word "amish" in the name and then saw the high reviews, I definitly wanted to make it for the breakfast. I made one with turkey bacon (what I had on hand) and one with hillshire farms cheese smokies.(fyi: the bacon one was empty way before the sausage one was) The only thing I did different was brown the hashbrowns and lay them on the bottom so they had a crunch to them. The casseroles were a hit! The principle said she wanted to hire me as her personal chef and that she could eat this casserole all day. It was SO easy. I highly recommend this breakfast casserole. PLUS, it is gluten free. I then made it a few weeks later for Christmas morning. But I put it together the night before (without browning the hashbrowns) and in the morning put it in the baking dish. Turned out wonderful again. You can do it either way and its easy and is super wonderful. Oh yeah, I guess I did not put in the whole sweet onion. I only put in half because the onion was huge...your preference.
