Cheesy Amish Breakfast Casserole
I was put in charge of the teacher Christmas appreciation breakfast which I had never done before and I have tons of amish relatives so when I saw the word "amish" in the name and then saw the high reviews, I definitly wanted to make it for the breakfast. I made one with turkey bacon (what I had on hand) and one with hillshire farms cheese smokies.(fyi: the bacon one was empty way before the sausage one was) The only thing I did different was brown the hashbrowns and lay them on the bottom so they had a crunch to them. The casseroles were a hit! The principle said she wanted to hire me as her personal chef and that she could eat this casserole all day. It was SO easy. I highly recommend this breakfast casserole. PLUS, it is gluten free. I then made it a few weeks later for Christmas morning. But I put it together the night before (without browning the hashbrowns) and in the morning put it in the baking dish. Turned out wonderful again. You can do it either way and its easy and is super wonderful. Oh yeah, I guess I did not put in the whole sweet onion. I only put in half because the onion was huge...your preference.

Uncle Bill's Chicken Strips
The first time I made this recipe, it was pretty tasteless. I also did not have parmesan on hand so I put in different cheese which I'm sure changed the taste a little but still would've been bland. It needed a whole lot more seasonings and with that being said,it has much potential. The second time around, my family raved about it. I used a seasoned bread crumb mixed with penko bread crumbs. I did have parmesan this time and I added seasoning like ceyenne pepper, cumin, chili powder, and more salt and pepper than called for. I also added a 1-2 dashes of hot pepper sauce in the egg mixture. It wasn't too much because my children who can be picky about spice said nothing about it being spicy but it definitly added that little kick. I baked the chicken then broiled themfor a few minutes to add that crunch. Was a hit the 2nd time around. Just needed more seasoning.

Easy, Sweet Cornbread Muffins
This recipe definitly is better than just a plain box of cornbread, however, I can't say it was a hit with anybody.I did not make them muffins and next time I will. I made them in 2 small loaf pans. I substituted sour cream (did not have it on hand) for cottage cheese and did not add the white sugar as suggested that it is too sweet with it. When making boxed cornbread in the past, I just add half a can of creamed corn and it is just as moist. Just a thought.
