Stuffed Acorn Squash
This nce was good, but I did the following to enhance this: Used a cornbread stuffing mix and had a few pices of dried white bread so added that. Also added celery, onion, a chopped apple, about 3/4 lb of browned and crumbled breakfast sausage. Added the butter and 1 cup of the water the mix called for on the stuffing package. Skipped the brown sugar. This was enough for 4 squash halves STUFFED FULL. Hubby and daughter loved it.

Cucumbers in Sour Cream
Took over reviewers advise, added 1/2 the sugar, dill and onion...let it sit overnight. Good basic recipe.

Bob's Stuffed Banana Peppers
Tasty, but triple the amount of meat filling needed. Additionally I made 12 large meat balls and still have enough meat mixture left for another batch of the peppers. Add the mozzarella topping. Use whatever tomato sauce you like...I used one with zucchini and other vegies.
