St. Louis Toasted Ravioli

Reviewed: Jan. 30, 2005
I worked at the Olive Garden for my entire college career and lived on their toasted ravioli every Friday and Saturday night. When I saw this recipe I knew I had to try it. I used beef ravioli instead of the cheese ravioli the recipe calls for and they tasted exactly like the ones I had while working at the Olive Garden! This is an excellent recipe!!!

I can't have a party without my guest expecting these wings on the menu!! I always marinate them overnight and they turn out awesome. Very flavorful and tender!

Calico Beans

Reviewed: Jan. 30, 2005
These beans are great, I always make a double batch! Since I double the recipe, I do drain one of the cans of butter beans so as to not have them too runny. I brown the hamburger and then mix all the ingredients in a large bowl. Because all the ingredients (besides the hamburger) are "ready to eat" I put it in my crockpot set on low heat and forget about it until I'm ready to serve. This has seemed to work well for me and the consistency has always been perfect, not soupy and not stucco like; just perfect! This is a great recipe for a family gatherings or when you need that perfect side dish.

Caramel Peanut Fudge

Reviewed: Jan. 30, 2005
Although it these fudge "bars" are time consuming, they have great flavor to them. I made them for my christmas cookie tray and received rave reviews. Make sure to keep it stored in the fridge because the caramel layer does sort of ooze out of it when it is at room temp. This has turned out to be one of my husband's favorites so in my book it is well worth the time!

Caramel Filled Chocolate Cookies

Reviewed: Jan. 30, 2005
I have made these the past two christmas' and always get great feedback on them. The dough does get a bit sticky so you have to work fast, but I have found that if I spray my hands with Pam cooking spray it is much easier to work with. Lets face it, your hands are going to get messy anyway while making these cookies anyway so why not do whatever you can to make it easier on yourself! These cookies are great and well worth the mess!!

Caramels

Reviewed: Dec. 17, 2002
This was my first attempt at making any type of candy, I found this recipe to be very tolerant of my beginner skills. I started making these and realized that I only had a thermometer that went to 220 degrees. I thought I could just "wing it". Well needless to say I didn't heat the mixture long enough, so the caramel wouldn't set. The next day I went and bought the proper thermometer and put the unset mixture back on the stovetop, brought it to 250 degrees and the caramels turned out great. This recipe is extremely forgiving and very easy to follow once you have the proper tools.

Milk Chocolate Popcorn

Reviewed: Dec. 17, 2002
This popcorn was extremely easy to make. I wanted to make a double batch, but only had 1 package of milk chocolate chips on hand. I improvised and made my second batch with a bag of butterscotch morsels that I had. I mixed the chocolate and butterscotch popcorn in one bowl when it was finished baking for a colorful and very tasty treat. This was a nice change from the standard caramel corn.
