Mulligatawny Soup I

Simply Delicious! Used other reviewers' ideas: added chick peas, substituted olive oil for butter, added 3 shakes cayenne and used 2 1/2 tsp curry. This is a perfect base soup - maybe spinach would be a nice addition? Spiciness sneaks up with a subtle touch - what a treat. Used brown basmati rice. We love it - served with toasted wheat bread strips with cheese. YUM

Baked Stuffed Winter Squash

This is an excellent recipe - used ground chicken & added cinnamon and s&p - skipped nuts. Will add veggies next time - options are endless. Sprinkled a bit of Texas Pete on mine - Hubby enjoyed as is. Please don't let the photo turn you off! Try It - You'll Like It : )

Mediterranean Chicken

This is dee-lish - soooo flavorful. Coarsely cubed chicken, used crushed basil tomatoes (in cupboard), and stirred in fresh baby spinach when adding olives. Thinking petite peas might be nice too. Served over saffron rice. YUM. Thank you, Robyn.

Stuffed Jack-O-Lantern Bell Peppers

Very Cute Presentation; stuffing disappointing - forget the bread (sub w/yellow or brown rice maybe), add some real veggies, and zip up with some speecy-spicy-spoosy (Ro'Tel tomatoes, salsa, corn, etc). As is, tastes and looks like pepper-shaped meat loaf. Will try again next year with changes. Used green, yellow, red & orange peppers - What a grand idea!

Peachy Rice Salad

Wonderfully Refreshing; filling yet light. Used brown rice. Had no celery so substituted seeded diced cuke which I added with toasted walnuts at serving time. Used as main course with cottage cheese & cilantro & cowboy caviar. YUM!

Dee-Lish! Even on indoor grill. Used the recommended aioli sauce - Yum! Used multi-grain sandwich "flats" and will try an onion slice next time. Have a treat by using this recipe soon!
