Very good! I added about a cup of chopped spinach and it was well received by my family.

Ricotta Cheese Cookies

Reviewed: Jan. 24, 2011
I made these exactly as written. I'm very impressed by the taste and texture of these cookies! They remind me of a sweet scone or fluffy shortbread. I made them huge and then froze them in order to use them for a strawberry shortcake dessert later. The only thing I will do differently is let them brown a bit more. Thanks!

Ricotta Cake

Reviewed: May 1, 2010
Like other reviewers, I mixed some of the ricotta mixture in with the cake batter, then laid the rest on top when it was time to put it in the oven. I made a strawberry sauce to go over it and served it with ice cream on the side. My husband and guests loved it. Thanks!

Boilermaker Tailgate Chili

Reviewed: May 1, 2010
I made this for a chili cook off for work with a few changes: fried up real bacon instead of bacon bits, added another can of tomatoes, and dashed in soy sauce by accident instead of worcestershire sauce. Otherwise, made it as written and brought it to work the next day in a crock pot. It was really tasty, and it won the chili cook off. Very nice! Everyone wanted the recipe so I sent them to this site. Thanks!

Yum. Easy, I fried them on a hot cast iron skillet, as we have no grill.

Lentils and Rice with Fried Onions (Mujadarrah)

Reviewed: Sep. 30, 2007
Very good, very filling, and very easy. I added about 1 TBSP ground cumin, used lentils I had already cooked, and topped with yogurt as suggested.

A very good recipe. I will reduce the amount of butter and cheese next time. We used chopped spinach.

Kettle Corn

Reviewed: Nov. 8, 2005
This is really good, probably as close to the fair corn you can get. The first time I made it, however, I had a sticky, somewhat burned mess. Be careful not to get distracted! I tried it again right away and shook it contantly, as well as adding the sugar ahead of the pocorn and mixing it with the oil. Thanks!

Outrageous Chocolate Chip Cookies

Reviewed: Mar. 27, 2011
These cookies were super easy, and taste great. I used mini semi sweet chips. The only change I made to the recipe was to cream together the egg, peanut butter and vanilla along with the sugar and butter. Then I just stirred in the rest and they turned out perfect. Thanks! Edit: These cookies were just as good two days after baking.

Four stars because it was easy to make, the people I fed it to liked it, and I had the ingredients on hand.

Lentil Quiche

Reviewed: Sep. 5, 2007
I picked this recipe because I had some of the ingredients in the kitchen and thought I could make it work. I used frozen spinach instead of broccoli, basil, garlic, and oregano instead of italian seasoning, mozarella cheese instead of cheddar, and totally forgot to add the tomatoes and the recipe still turned out very, very tasty. Will be making this again!

Spanish Rice II

Reviewed: Feb. 4, 2007
I was looking for a good basic spanish rice recipe that is open to changes in spice and this is it! It was very simple from start to finish, and had a good flavor. I added garlic and a dash of hot sauce. Omitted green pepper, as I did not have any, but will use next time. Thanks!

Sean's Falafel and Cucumber Sauce

Reviewed: May 1, 2010
I am really happy to have found this recipe. I love falafel, and these are so much better than the box mix. They were very fresh tasting. I added 2 eggs because the one I tested before cooking the rest fell apart. Otherwise, put it together as written except that I was out of cayenne. I used a food processor and pulsed the beans into the parsley mixture with no problems. The sauce was made as written and was really good. We made sandwiches out of it with flatbread and tomatoes. Thanks for a great recipe!!

French Onion Soup VII

Reviewed: Sep. 16, 2008
I haven't found a better tasting vegetarian version of French Onion soup anywhere! Per other reviews, I did add some thyme, and a little less wine than called for. It's even better the next day.

Marinated Turkey Breast

Reviewed: Nov. 23, 2007
This marinade proved to be flexible, as I did not have cloves and accidently put parsley along with basil in the mix. Cooked in a slow oven, covered, along with chicken broth to make the gravy. The result was tender and everyone thought it tasted great. Thanks!
