Chef John's Gazpacho

This was fabulous! I eliminated the red bell pepper just because I didn't have any around. I simplified the process by not bothering to peel the tomatoes or strain anything, and did it all in the food processor. I sarted with step 2 and poured it all into my separate bowl. Then went back to step one and started with the jalepeno, garlic, and seasonings to get those the finest. Then added the green onion and cucumber until pretty chunky. (Bell pepper would have gone in here too.) Finally added the tomatoes till they were the right size. Poured it into my bowl, did a quick mix, and poured some back to the food processor to do the final puree- not even sure that step was necessary! We got everything necessary in our CSA box again this week, so I'll be making more soon!

Mexican Bean and Rice Salad

This was excellent! I was out of limes so I used cider vinegar, and it turned out awsome. It's got so much nutrition packed into one dish that I might end up just eating a big bowl for lunch. Thank you!

Apple-Bacon Green Beans

We really enjoyed this dish. It was a nice change from plain steamed green beans. I used fresh beans and cooked them first, holding them until the apples were soft and the sauce was set. We'll be making it again for Christmas Eve!

Baked Potato Soup

Crab and Shrimp Delight

I was excited about this recipe but ended up disappointed. We had to add water so the pasta could fully cook, and it took about 20 extra minutes in the oven. The flavor wasn't too exciting either-- we decided we could add seasfood to white cheddar mac and cheese and get similar results.

Apple Pork Chops

A very tasty dish. A bit time-consuming at first, but then you just coast until dinner comes out of the oven. The chops were very juicy, and the apples gave the kitchen a wonderful aroma. We didn't bother peeling the apples and they turned out great.

Spinach Veggie Casserole

Good recipe for a change of pace. It cut nicely and re-heated well for lunches. A bit heavy on the cheese... if I make it again I'll cut the cheese in half. This is not a quick recipe to whip up after work. I used 4 different pans in preparing it! (rice, cooking veggies, cooking butter/flour/milk/cheese, and casserole) Also, the "paste" never thickened, but it worked nonetheless.

Impossible Coconut Pie II

A good recipe, but it didn't turn out like I expected. It really doesn't make a "crust." Rather, it bakes itself crispy like a cookie would. I probably won't be making it again.

Cajun Red Snapper

This is a tasy dish, the cajun flavors are very prominent. That's good if, like me, you're wary of fish in general. If your kids like spicy stuff they'll probably eat this without a problem! The only drawback is that collecting and measuring all the spices is a bit time consuming. But all in all, a good dish! Yummy with couscous and a salad.

Crunchy Turkey Salad

A very tasty dish, brought raves from my office. Very easy to make ahead and bring to a potluck. I doubled the amount of mayo & sour cream; it seemed dry.
