Cajun Red Snapper

Reviewed: Sep. 9, 2009
This is a great recipe! It was fast and easy to put together because all the spices are those you keep on hand. The fish was spicy and delicious, and I even omitted the salt completely. The fish was so flavorful, we didn't even notice! We are trying to eat less sodium, so that is a huge plus!

Black Bean, Corn and Turkey Chili

Reviewed: Feb. 5, 2009
Fantastic! This is easy, satisfying, and quick to put together. I didn't have corn, so I used some left-over white rice and it became a one-dish meal. Using Rotel in place of the salsa and adding fresh cilantro (as other reviewers suggested)gave this a fresh and delicious flavor.

Baby Spinach Salad with Tomato and Mozzarella

Reviewed: Apr. 27, 2007
I made a few minor changes to this recipe, and served it at a dinner party to rave reviews. (1) In advance, I sliced the tomatoes (I used plum/roma as they're more flavorful), mozzarella, and basil and put in a container w/a lid. (2) when mixing the balsalmic vinegar and olive oil, I also added 1/2 tsp of djon mustard (gave a subtle delicious flavor that was missing before and goes great w/the spinach). Pour this over the tomatoes, basil & mozzarella and cover. Chill for at least 30 minutes or more to allow the flavors to blend. When ready to serve salad, put spinach in large salad bowl, and pour tomatoe mixture on top. Toss to coat. (3) I also made extra "dressing" and added as needed when tossing, so that the spinach was sufficiently covered. Fantastic!!

Spicy Honey Mustard Pork Roast

Reviewed: Apr. 30, 2003
Let me start by saying that I completely lost my taste for pork almost a year ago. Until tonight. I thought this was fantastic. I cut back on the pepper, and used fresh ground. I also used 1/2 the honey, and suplimented with some deli mustard for a little extra "zing". The flavor of the glaze was amazing. A family hit and sure to be made again and again!!

Cowboy Hash

Reviewed: Apr. 30, 2003
This is a quick, hearty and tasty dish. I love it because you can mix and match ingredients, depending on what you have on hand. I added 1/2 packet of taco seasoning when browning the ground beef, and sprinkled shredded cheddar on top when serving.

T's Easy Chicken

Reviewed: Apr. 30, 2003
Tasty. After reading other reviews, I browned the chicken w/the onion, then added the mushrooms and tomatoes. It didn't make sense to drain the tomatoes, as the liquid added moisture to the chicken and made a nice sauce to mix with rice. I cut back on the lemon juice and added garlic, basil and Italian seasoning.

Ever since finding this recipe several years ago, it has become a family tradition. It saves time, oven space and is absolutely delicious!! I didn't change a thing!
