Master Recipe for Rich and Creamy Cheesecake

Reviewed: Dec. 9, 2012
I'm super impatient with baking, so I bought the keebler ready made pie crust from Ralphs. I bought the 10 inch instead of the 9 since they are not as deep as a springfoam pan. The only changes I made was adding 1/2 ts salt and subtracted 1 ts of vanilla extract. I hate it when you can catch that vanilla extract bitterness if you add to much. Any one know what I'm talking about? I also didnt wait til anything was at room temprature, and just threw everything in at the same time and started to blend it all together. Yea... I'm that impatient. There were tiny chunks of cream cheese in the batter still when I threw it in the oven, but after 50 minutes at 325 degrees the cheese cake came out perfect with no crack. I also didnt do the water bath but did leave the door ajar for 20 minutes before throwing it in the fridge. This is the second time I'm making this reciepe, and love that its so simple and not sensitive. I top it off with Smuckers strawberry jam. My husband loves it, and he thinks eating is a chore.

Maple Walnut Pumpkin Pie

Reviewed: Oct. 17, 2012
The first time I made this recipe I followed the instructions as directed. I felt that I had to put the pie back in for an additional 20 minutes at 325 degrees. Also the first 15 minutes at 425 degrees turned the top of the pie darker brown which wont matter if your going to put the topping on but if you decided you dont want the topping the color was not attractive. The second time I make this recipe I'll almost double all the spices and added 2 tbs of Brown sugar and flour to the mix. I'm not a fan of custurdy pies, I like my pie consistancy a little less creamy. Probably bake it longer at a lower temprature, but thats just because of my prefrence to the consistancy. All in all a good recipe I will make again with the few changes.

Curry-Coconut Shrimp

Reviewed: Oct. 17, 2012
after making it the first time i realized it needed more flavor doubled all the spices and added tumeric, and didnt need to add the corn starch,. I also got creative and added alfredo sauce ommiting the coconut milk and sugar. I know it changes the whole recipe but it turned out great. this recipe would get 5 stars if you increase the spices especially the curry powder.

Roasted Veggie Pasta Bake

Reviewed: Apr. 11, 2012
I made this recipe as is and it came out pretty good. How ever here are the changes I made which i think made it better. i just soaked the noodles in hot water but didnt cook them. This way when i drained and added the chicken and veggies and cheese and tossed it in the oven, the noodles didnt come out too mushy like another reviewer complained. I also didnt add any broth because i'd liked it to be creamer. I added mushrooms cuz i had them and added some garlic salt to the veggies when roasting. I also freeze any extra for up to 3 months and toss it back into the oven when i need dinner quick.

Quinoa and Black Beans

Reviewed: Jan. 18, 2012
the first time i made this following the directions exactly and it turned out very good. However the black beans were too much and the over all consistency was too gooey for me. I made this dish again tonight with slights changes. 1 can black beans, one can corn, sauted the quinoa with the onions, garlic and spices for 3 minuts then added the vegitable broth. Heres where I changed things around a bit more. I boiled the quinoa for about 5 minutes before reducing the heat and covering it. I also put a paper towel under the cover to help absorb more moisture ( a trick most persians use when making basmati-jasmin rice) this helped it not have that muddy consistancy at the end. I also microwaved the beans and corn before stiring it in. Too much stiring can cause that muddyness again. Hope this review was helpful.

Lemon Chicken and Rice

Reviewed: Sep. 13, 2011
Great recipe. I added black pepper and lemon paper. 1 1/2 tbs lemon juice. It just tasted a bit too salty with the 1/4 ts of salt. So next time I'll leave out the salt. I also mixed the cornstarch with some water before tossing it in with the rest of the ingredients.
