Six Can Chicken Tortilla Soup

We really enjoy this recipe! I use 3/4 of a rotisserie chicken instead of the canned. We like more meat. Also, I add a can of kidney beans. Great leftovers!

This recipe is fabulous! I doubled the Lobster Tails Steamed In Beer recipe from this website for Valentine's Day, then used the leftovers a few days later for this sandwich.

Lobster Tails Steamed in Beer

We loved this recipe! I fixed it for Valentine's Day with rave reviews. I used O'Malley's Irish Cream Ale. I doubled the recipe to have leftovers and used them to make the Seafood Sandwich from this website a few days later. Yum!

Guacamole

We LOVE this guacamole! It's better than our favorite at the local Mexican restaurant. I had 5 avacados, so adapted the recipe. I smashed 3 of the avacados, then chopped the last 2 for chunky consistency. Also added an extra pinch of red pepper. There's only 2 of us now that all the kids are gone, so my husband took leftovers to work and had lots of requests for the recipe.

Cow Pies

I made this recipe for the 1st time yesterday. My husband declared these his "favorite, a man's cookie. It has everything in it we like". For him to say that means a lot! The only thing I changed is I put 4c of oats and 1/2c ground flax seed. I used crunchy peanut butter, the only kind in our house. They're great warm from the oven or pop a cooled one in the microwave...with a glass of milk. Yum!

Seasoned Turkey Burgers

My picky family raved about this recipe last night! It's rare when we all agree! I used an egg white instead of whole egg, like suggested earlier. Also, put a slice of canadian bacon and pineapple ring with some fat-free mayo! Yummy hawaiian turkey burgers! This recipe will be enjoyed for years to come!

Apple Pork Chops

This recipe was a hit! Lots of comments on the wonderful aroma, too! I used only 1 Tbs of oil and substituted orange juice for the water. I baked for 45 minutes, they ended up a little chewy. Next time only 30 minutes and they'll be absolutely perfect!

Black Bean Salsa

My family all loved this salsa! Since tomatoes aren't in season, I used 2 cans of finely chopped tomatoes along with the rotel...turned out perfect! I'd love to can this in small jars, tie a ribbon around the lid and give as gifts next Christmas!!

Hot Pizza Dip

I took this dip to Bunko last night and brought home an empty dish! I made it about 4 hours in advance and popped it in the microwave right before serving, yum! I used chopped pepperoni and mushrooms for topping, no problem with grease pooling. I will definitely serve it to my family Super Bowl Sunday!

Day Before Mashed Potatoes

This recipe is fabulous for Christmas dinner! All 21 of us loved it! I tripled the recipe, placing 2/3 in a large crockpot in the fridge 3 days ahead. I heated it on low, stirring occasionally, for 6 hours. The other 1/3 went in a glass 9X13 in the freezer. My family wanted to eat it less than a week later! I heated it a few minutes in the microwave...yum! I used golden potatoes, left the skins on, this is the best mashed potato recipe we've had!

Ultimate Breakfast Casserole

I served this yummy recipe Christmas morning, absolutely everyone LOVED it! It's hard to please 10 people, but all I heard was how wonderful it tastes...this is our new tradition! I didn't change anything in the recipe, it's perfect just the way it is!
