Argentine Meat Empanadas

Loved it! with one MAJOR CHANGE...the puff pastry is too sweet. I buy the pastry rounds specifically for empanadas in the freezer section in the grocery store. There are various brands, Goya, La Cubanita, and others. I found them in St. Paul MN as well as Huntington Beach,CA. The meat preparation is fantastic. All fat is gone so they bake up beautifully. Delicious!

Stuffed Green Peppers I

Try using red peppers! They add a sweetness that is delicious. Substituting turkey in these is great. Lose some fat, but the taste is still great.

Grandma's Chicken Noodle Soup

A great basic recipe! I omitted the cornstarch because the noodles added a touch of starch even though I boiled and rinsed them separately. I added carrots which gave it a sweet taste. For the 2 of us, I used one large can of broth and cut up 2 raw chicken breasts and cooked it together. Delish!

Baked Potato

Microwaving is faster, but it can't give the potato that crisp, tasty skin. Make sure you scrub the potato well, rub with olive oil, a little salt and pepper. There is nutritional value in that skin, and this will make it almost as tasty as the fluffy inside part.

Greek Lemon Chicken Soup

excellent soup. This is one of my favorites. I added more chicken, chopped spinach and instead of rice, Shirataki (tofu) noodles. It made it more of a complete meal with more protein and vegetables. I was afraid of tempering the egg, but it worked perfectly. I did use only 4 eggs and that really tasted fine.

Ultimate Party Meatballs

Served these twice during the holidays and both time they were inhaled! People raved about the sauce and were sure I'd made the meatballs from scratch. I was thrilled to tell them the meatballs were purchased frozen and of the ease of the sauce. When throwing a party, time is often a big factor and they were happy to here how easy they are. Of course you can make the meatballs from scratch, but it is hard to imagine they would be better. My friends will surely be serving them when I come over now.

Stuffed Peppers

I used red bell peppers and green peppers. The red give it a wonderful slightly sweet flavor. I will use all red next time. Also, to cut fat and carbs, I used extra lean turkey and reduced the amount of rice in half. In addition to 1 can of tomato sauce, I used 1 cup of Pace chunky salsa. I put all the liquid and the uncooked rice in with the browned beef and let it cook 20 min until rice was cooked, then put it in the parboiled peppers for 20 min. No need to baste. Very moist and juicy.

Blue Cranberry Sauce

I needed to add 1/2 cup more sugar. It was too tart for me, but I like sweet. And please be careful with the spices. Allspice and Nutmeg are very strong and can overpower the cranberry flavor.

Awesome Slow Cooker Pot Roast

Pot Roast Perfection! I added yukon gold potatoes, sliced mushrooms, and baby carrots to make it a complete meal, but the gravy and the pot roast I did just like the recipe and it was dynamite. The meat was moist, and pulled apart perfectly. Kudos! and a huge thanks because I have looked for a reliable, easy pot roast recipe. I'm serving it at a dinner party Saturday. I guarantee it'll get more raves than the more labor intensive recipes I have made in the past.

Strawberry Onion Salad

Great, but if you don't want to make the dressing, try "Brianna's Home Style Blush wine" dressing. It is a perfect complement and probably has similar ingredients. I use romaine because I prefer the crispness, but the combination of red onions and strawberries is fantastic.

OUTSTANDING! My Family loved it Only change was I threw the veggies into a large bowl and poured olive oil over it and rubbed it into them instead of brushing it on. Can't wait to make it again! Thanks Virginia.

Easy Garlic Broiled Chicken

I use this as a basic marinade, but I add lime or lemon juice. I add an equal part of soy, lemon and butter and add about as much garlic as mentioned. Thanks for the reminder that this can be used as a glaze as well.

Best Ever Sausage with Peppers, Onions, and Beer!

Outstanding! I used spicy Italian sausage and skipped the hot sauce & cilantro. The first night I served it on Hoagie rolls, sprinkled parmesan cheese and served it with a salad. My husband couldn't stop talking about it. Two days later, I added about a cup of spaghetti sauce, and served it over whole wheat penne pasta. My husband said it was even better than he could have imagined. It made a lot so I still have some in the freezer! This is great for people without much time to cook. I can't wait to serve it to guests. Added information: I just made it with 1 lb. boneless, skinless chicken breasts and 1/2 lb turkey jalapeno sausage. Same GREAT taste but LESS FAT. Must be the peppers!

Six Can Chicken Tortilla Soup

While shopping for the beans and tomatoes, I noticed that you could buy them with various spices, jalapeƱos and other chiles. That's what I did and this soup was to die for! The next night, I added more jalapeƱo laced black beans and chicken and it was eagerly received. It makes a great, complete dinner.
