I have been a Spanish teacher for 34 years and a cook forever. I'm looking forward to retirement so I can spend more time gardening and cooking.
My favorite things to cook
I love to make desserts. I have a killer Apricot BrandyCake recipe and our family Carrot Cake recipe is the best I've tasted. I can say that because it isn't MY recipe, but has been passed around for years.
My favorite family cooking traditions
My parents immigrated from Mexico over 60 years ago, but I can't say I'm that great at cooking Mexican food. My son does request enchiladas and rice every time he comes home.
My cooking triumphs
According to my husband and son, I would say stuffed chicken breasts, enchiladas, 5 cheese mac and cheese, and a standing rib roast are their faves that I make. They also love the carrot cake, pumpkin cheese roll and berry trifle. Making my family happy; that's success to me.
My cooking tragedies
I spent lots of money on the ingredients and forever working on a tiramisu only to have it turn out soggy. I couldn't figure what happened. When I rechecked the recipe I realize I had misread the amount of liqueuer and had about tripled the quantity. I wasn't happy with the texture, but everyone else was happy.

Argentine Meat Empanadas
Loved it! with one MAJOR CHANGE...the puff pastry is too sweet. I buy the pastry rounds specifically for empanadas in the freezer section in the grocery store. There are various brands, Goya, La Cubanita, and others. I found them in St. Paul MN as well as Huntington Beach,CA. The meat preparation is fantastic. All fat is gone so they bake up beautifully. Delicious!

Stuffed Green Peppers I
Try using red peppers! They add a sweetness that is delicious. Substituting turkey in these is great. Lose some fat, but the taste is still great.

Grandma's Chicken Noodle Soup
A great basic recipe! I omitted the cornstarch because the noodles added a touch of starch even though I boiled and rinsed them separately. I added carrots which gave it a sweet taste. For the 2 of us, I used one large can of broth and cut up 2 raw chicken breasts and cooked it together. Delish!
