Slow Cooker Chicken Stroganoff

Reviewed: Nov. 13, 2012
This recipe is great as is! The only thing I did after making it as written the first time was to have it with some steamed broccoli on the side the second time. It is a little bit heavy and creamy with the soup and cream cheese so I think having a good side of veggies helps to balance that out. When I made this a third time I added a splash of red wine in the beginning (which is a good way to add moisture without altering the flavor for those who are worried about too little liquid from the start) All in all, great recipe to come home to after a long day at work.

Happy Roast Chicken

Reviewed: Feb. 1, 2012
Okay, if you do this right, it comes out GREAT! I don't give 5 star reviews to just anything. This recipe totally deserves it. My roommates and I made this tonight following the recipe exactly, except we couldn't fit 2 whole lemons in there so I cut one into 4 pieces. Also, i spread the garlic (minced) around on the inside then put in the lemons. The only other thing we added was garlic powder to the skin but other than that nothing was changed. It was so good. We didn't cover it with foil for the 15 minutes after cooking. It was juicy and perfect. I also don't like mustard but you can't even taste it. it took 1 hour after the temp change and came out cooked all through. We also didn't have a cast iron skillet but have a sort of shallow wok thing and used that. So good and sooo worth the time it takes to cook.

Simple Scones

Reviewed: Jan. 8, 2012
YOU DON'T NEED A FOOD PROCESSOR! I made these by hand, using cold butter (not frozen), I cut it into little cubes before putting it in the mix. Also, I didn't have sour cream or buttermilk so I added a 1/2 tbsp of lemon juice to 1/2 cup of milk and let it sit for 15mins then mixed (this is homemade buttermilk). These came out great! I've never made scones before but this was a very easy versatile recipe. Instead of raisins I made half almond chocolate chip and half butterscotch chips. So good.

Quick and Easy Home Fries

Reviewed: Jan. 6, 2012
Great recipe! I only used half of a potato because I wanted to try it out for myself for breakfast. It came out great! I added onion and cooked it with the potato according to the recipe. Salt pepper and ketchup on the side, and they tasted like they were fresh from a diner, crispy outside, soft inside. awesome. I used less butter and the time was a lot shorter because I had less potato.

Cream Cheese Frosting II

Reviewed: Jan. 2, 2012
I hate to review a recipe based on the modifications I've made but I figured I should share the changes to help others out. I've never made this as is because reviewers said it comes out "too cream cheese-y" So here are the changes that make it sooo perfect: use 1 8oz cream cheese, 1/4 c. butter, and 2 c. powdered sugar, 1 1/2 tsp. vanilla.

Pumpkin Bread IV

Reviewed: Jan. 2, 2012
I cut the recipe down to 24 servings and it made one loaf and about 12 cupcakes. Fresh out of the oven, this is the best, most moist pumpkin bread ever. I didn't add any nuts or raisins or anything. After a couple of days it gets a little dry and less appealing (both in and out of the fridge). great recipe either way though :D

Di's Delicious Deluxe Deviled Eggs

Reviewed: Jan. 2, 2012
great recipe. I didn't have hot pepper sauce, nor do I like spicy foods, so I added about 1/2 tbsp of dijon mustard. Like others have said, the celery and onion have to be very finely chopped. Also I would recommend putting salt in the water to boil the eggs, i think it helps the shells come off easier. I put in too much salt, but putting the filling in the egg white helped (that and I like salty food). I would def make these again, the method of boiling is just right. I usually boil (heat on all the way) for 15 mins.

Carrot Cake III

Reviewed: Dec. 3, 2011
This is the best most moist carrot cake i've ever tasted! my friends and family love it and it lacks nothing. The only change I made was using one cup of brown sugar and one of white but I doubt using all white or all brown would make a huge difference in how AWESOME this cake is..

I wish it was more moist. It was pretty stiff and very corny... the search for perfectly moist cornbread continues..

Easy Hummus

Reviewed: Dec. 3, 2011
Making it in a blender was NOT easy. I made this recipe as is and it didn't turn out so great. I added a lot of oil and lemon juice because it seemed too dry. After a few days sitting in the fridge though, it started to taste a lot better.

Eggless Peanut Butter Cookies

Reviewed: Dec. 1, 2011
Here are the changes I made: butter instead of shortening, milk instead of buttermilk. Since I used salted butter, I only used 1 tsp of baking soda. That being said, these cookies were soo good! I made them for friends who came over and they just could not stop eating them. I added chocolate chips to about half the dough and they came out great too. Perfect for when you want cookies and are out of eggs :)

Donut Muffins

Reviewed: Nov. 16, 2011
They really tasted like donuts. I was not expecting that. I made half of the recipe and it turned out 6 regular sized muffins (cupcake sized). They were great. I added brown sugar for the topping so it was more of a brown sugar cinnamon type thing, it tasted like cinnamon toast crunch. Great for breakfast :)

Pizza Dough I

Reviewed: Nov. 16, 2011
I LOVE this. I've made it many times just as the recipe requires and it's turned out perfect every time. The great thing about a simple pizza dough recipe like this is that you can do what ever you want for toppings. Since the dough is so easy to make its fun to experiment with too.

Chocolate Chip Banana Muffins

Reviewed: Aug. 22, 2011
I made them this morning and they came out great! I'd definitely say they have more of a cupcake texture than a muffin texture but they were great either way. My batter yielded 20 cupcake sized muffins and 10 mini muffins. It was absolutely delish :)

Fluffy Biscuits

Reviewed: Aug. 1, 2011
I loved them! I decided to experiment with half the dough by adding about a teaspoon of minced garlic and some cheese (any kind shredded) to make a pseudo cheddar bay biscuit. I wish they were a little bit more moist though.
