Easy Roasted Red Pepper Hummus

Reviewed: Mar. 16, 2014
I couldn't find tahini at my store and maybe it would have had a 5 star review with it, but as it is, I had to sub the tahini with 1 TBSP peanut butter and 1/4 c. sesame oil; I reduced the lemon juice as per other reviews and the end product was good. I come short of saying "Great" but if I could find the tahini it might be that. Thank for for the recipe.

Feta Chicken Salad

Reviewed: Feb. 17, 2014
I took this recipe and changed the servings to 50 for a Bridal shower. The new measurements called for 2 whole onions and I added 3/4 of one medium onion and it was oniony enough; With that in mind, I advise everyone to watch the measurement of onion this recipe calls for and go easy. You can always add more if you want more but you can't take away... With all that, it was still a really good chicken salad and everyone at the shower loved it. It's a keeper recipe!

Old Fashioned Tea Cakes II

Reviewed: Feb. 4, 2014
They were good with our tea. Sort of like a shortbread. They did take a little longer than 8 minutes-closer to 10.

Alfredo Sauce

Reviewed: Mar. 12, 2013
It doesn't get any easier or any tastier. To those trying to swap out margerine for butter, it might save fat, but it costs you flavor. You don't need to have this on your menu every night, so please do yourself a favor and fix it with the real cream and butter, (just skip having seconds) and enjoy your food a little. Thanks for a great recipe!

Slow Cooker Chicken Stroganoff

Reviewed: Feb. 26, 2013
Some recipes are so tasty for how easy they are to assemble and cook-this is one of them recipes. I did follow the directions with one addition; I added some blended roasted red peppers (cause I love them and they go well with Italian dishes...) We served this over campanelle noodles and everyone loved it!

Sausage and Cheese Crescent Squares from Pillsbury

Reviewed: Feb. 8, 2013
Winner, Winner in my house! This is a lot like sausage puffs with the additional cheese. This is a good appetizer (as recipe is written) but it looks like the breakfast crowd is critiquing it as a breakfast. It can be both but critique it as an appetizer. If you try this as a breakfast offering, put your scrambled eggs on the side or you might have soggy crescent rolls and judge it unfairly.

Cordon Bleu Chicken Rolls

Reviewed: Jan. 12, 2013
We liked this recipe and sauce well, but for some reason, (maybe I pounded it too flat) the chicken was a little dry. Not sure how I can help that except to adjust the cooking time. It's one to definitely do again.

Real Homemade Tamales

Reviewed: Jan. 1, 2013
This recipe is exactly like the one I received from my neighbor who worked in a Mexican resteraunt in Colorado for most of her adult life. We also used shredded beef in place of pork, but I think the pork is better. We did not use the sour creme as a topping but I will try it next time! These froze really well too if any one is interested in making large batches.

Raspberry and Almond Shortbread Thumbprints

Reviewed: Dec. 21, 2012
This was absolutely wonderful and was enjoyed and devoured as quickly as it was set out. We did substitute raspberry paste for raspberry jelly because the raspberry flavor is more concentrated and we like it much better. Also, we put the raspberry paste into a zip lock bag and snipped off a small corner to fill the holes with no mess or overfilling. This worked out beautifully, so we did the same thing with the glaze only with a smaller hole to add pretty stripes of glaze. Thanks for a keeper recipe.

German Twists

Reviewed: Nov. 8, 2012
We like this recipe. It was very easy to put together and I did refrigerate it overnight as the recipe called for. The twists were tender and delicious, not too sweet. It really didn't puff up all that much for a yeast cookie, but maybe that was because this recipe called for no raising of the dough-just put it right in the oven. tip; we used a ruler and a pizza cutter to cut the strips into even 1 inch wide strips and it worked well to keep them a consistent size for even baking. Thank you for a great recipe-we plan to make it again for the holidays.

Chili con Carne II

Reviewed: Nov. 2, 2012
It was ok, not great, but just ok. I think the addition of cinnamon and cloves threw it off. To me that combination was strange. Maybe I'm not too adventurous with my chile con carne, but I really wanted a good traditional recipe and the spices were just off.

Creamy Vanilla Frozen Yogurt

Reviewed: Nov. 1, 2012
I used oikos greek yogurt an like others used a full tsp. of vanilla. I will add that I make my own vanilla (using vanilla beans and vodka) and maybe it was because of the vanilla but my yogurt had the best texture, not too hard but not too soft. Perhaps using real vanilla instead if imitation could keep it from becoming rock hard after freezing overnight. This is an awesome recipe for those who like the genuine frozen yogurt and has all the promise of versatility with any addition you would like to make. Next time, I am adding blueberries! Thanks for a great recipe!

Rosemary Herb Bread

Reviewed: Oct. 22, 2012
I made this recipe as written, but added olive oil instead of margerine and added 2 tbsp. parm. cheese. Instead of letting it bake in the bread machine, I used the dough setting and shaped 12 medium/large rolls. It went over well with my family and I will repeat this recipe again.

Roasted Garlic Zucchini and Tomatoes

Reviewed: Aug. 26, 2012
The nice thing about this recipe is you can add or delete your favorite veggies to this Italian leaning side dish. We love adding red and green peppers with our zucchini, onion, garlic, and tomato mix and roasting the veggies tends to make them sweeter. Also, garlic can be roasted in its skins and squeezed out after roasting and just stirred into the veggies. This is awesome by itself or with pasta. Great as a side or main course.

Butterscotch Candy

Reviewed: Jul. 12, 2012
One reviewer said the temp needs to be at 240 degrees and this is incorrect. That temp will produce a chewy-praline like consistency. Butterscotch candy needs to be stirred constantly as the higher the temperature, the less water content and more concentrated the sugar becomes. This means it can burn easily if not stirred constantly. Butterscotch needs to come up to the temperature of soft crack stage (see below)just as the submitter wrote. . Soft-Crack Stage 270° F–290° F sugar concentration: 95% As the syrup reached soft-crack stage, the bubbles on top will become smaller, thicker, and closer together. At this stage, the moisture content is low. When you drop a bit of this syrup into cold water, it will solidify into threads that, when removed from the water, are flexible, not brittle. They will bend slightly before breaking. Saltwater taffy and butterscotch are cooked to the soft-crack stage. By following this recipe exactly and stirring constantly, it will be awesome!

Mom's Zucchini Bread

Reviewed: Jun. 24, 2012
I doubled the cinnamon (our taste) and this bread was awesome! I took another reviewers tip and blended the zuchinni and wet ingredients in my blender rather than shred them with good results. I think the cook time could be off-it could have used a little more than 60 minutes to firm up the middle a bit more but will use cupcake pan next time. It's a great bread and I'll use this recipe again!
