Easter Brunch Casserole

I made this for Easter Sunday Brunch and it was delicious! I added more eggs with some milk also, as it didn't seem like enough liquid for the amount of potato/bacon/onion mixture I had made. Served with a nice fruit salad, it was delightful.

Cooked Fruit Salad Dressing

This dressing is wonderful! The ingredients sounded a little odd to me, but I made it exactly as written and it is a keeper! Was enough to dress two big fruit salads.

Garlic and Cheese Bruschetta

This sounded delicious, but I didn't have sour cream, parsley, or green onion on hand, so I substituted a little extra mayo for the sour cream, regular onion for the green, and left out the parsley. I also didn't have swiss cheese, just a mild cheddar blend, but this turned out delicious. I think my husband ate half the loaf!! The fresh ground black pepper on top at the end really gave it a nice zing. Will definitely make again.

Roasted Asparagus and Yellow Pepper Salad

This is super good! Used red pepper instead of yellow, chopped nuts instead of slices, but was fabulous and tasted like it came from a fancy deli. The dressing, though high in fat, is delicious. Could probably cut down on the amount of oil to reduce fat content. Will definitely make again.

Garlicky Summer Squash and Fresh Corn

This was delicious! My garlic cloves were huge, so only used 2. I'm on Weight Watchers, so cut the fat by spraying the pan with Olive Oil spray and only adding 1 tsp of butter. It was wonderful, very easy and quick!

Asian-German Fusion Potato Salad

This is a great alternative to old-fashioned potato salad. The flavors blend well together and is actually easier to make than traditional. Even though the ingredients for the dressing sound strange, it is good and not too spicy. I think a little crumbled bacon would be excellent in it.

Sea Bass Cuban Style

This is delicious and so easy! Any firm fleshed white fish would work; I used red snapper. Had no fresh, so used two cans of chopped tomatoes. As some other reviewers remark, do go easy on the capers as they can turn the dish bitter if too many are used. Will definitely make again.
