Baked Ham and Cheese Party Sandwiches

I've made these several times now. So delicious and easy. I got my recipe down to how I like it - I use Koop's dijon mustard, plus in addition to the listed ingredients I add a tablespoon of honey, and a dash of garlic & onion powder (just a tad). I don't measure out the minced onion anymore, I sorta eyeball it. Also, I prefer these made with King's Hawaiian Savory Butter Rolls. They look exactly like the the Sweet Hawaiian Rolls. So I make half and half to please everyone in the family. The savory rolls give it another depth of flavor. I also prefer provolone cheese to swiss. But really, any cheese will do. I also bake these on a huge cookie sheet. I let the melted mixture cool to a a bit thicker consistency and brush it on the sandwiches instead of pouring it over the sandwiches. Fun recipe to play around with. Very good as written, though!!!!!

Absolutely the Best Chocolate Chip Cookies

This is my favorite chocolate chip cookie recipe. They are even better a day or two after you make them! I prefer mine with milk chocolate chips. I make these several times a year - and I bake dozens of them around the holidays.

Chicken Marsala

Very good! Very quick! I shall be making this again & again. I omited the sherry because I don't care for sherry. I used marsala cooking wine. Gordon Ramsay says it's OK to cook with cheap wine, yes? Glad I did, because it knocked off about $8 extra dollars (and we're all looking for inexpensive meals to put on the table) I would have spent on the wine. Instead of keeping it all in the skillet, I removed the chicken and placed it in a 350 oven to finish cooking. I then put the marsala, mushrooms in the skillet with the remaining oils and such, then eyeballed chicken stock and heavy cream. I added a roux of cornstarch & water and it thickened it up soooo nicely! Poured those succulent mushrooms on top of the chicken. Delish!

Slow Cooker Beef Stew IV

Simply delicious. I am not a fan of stew but this was just that good. The only thing I did differently is that I added celery, because I love celery! Next time I am making a bigger pot; this only lasted for one meal in our house!

Fried Onion Rings

VERY good base recipe! You got to eyeball the ingredients and make the batter to a consistency of your liking. I added dashes of salt, pepper, seasoning salt, onion powder & garlic powder to the batter. I also added a dash of tabasco sauce. These may very well be my favorite rings!!! The beer makes all the difference!

Never Enough Green Bean Casserole

Definitely delish. A little expensive ... for a side dish. I cooked mine in a crock pot and it ended up a tad runny ... had to add more fried onions to thicken it up. Everyone loved it.

Brooklyn Girl's Penne Arrabiata

Delicious. I was so impressed with this recipe - the chicken is fantastic and it really ties the whole thing together. Next time, instead of frying the chicken breasts cutlets, I will try baking them and popping them under my broiler to get that crispy, crunching coating. I can't wait to experiment with the different varieties of diced tomatoes!!!

Stove-Top Macaroni and Cheese

Quick and easy. I ran out of the blue box variety, so I needed something in a fix. What a plus that I had the ingredients on hand, too. I used a variety of cheeses (colby/jack mix and a mexican mix) and it turned out good. You may need to experiment a little with what cheese you would like best.

Cheese and Broccoli Chicken Soup

This recipe rules! If I could give this recipe 10 stars I would. I made it for some out of town guests who are soup lovers. I didn't follow the directions exactly...I used frozen broccoli (I have no patience to cut fresh broccoli), and I used four cups of cheddar cheese instead of three. The chicken was a nice change, but you don't need it. I also had a problem with the "flour paste" rising to the top. I used a slotted spoon and just scooped it all out while it was cooking. I didn't use the boullion cubes, I added a can of chicken broth instead. I would like to try this with velveeta cheese and see what happens!

Orange Glorious I

I had just received a new "Smoothie Elite" machine for my birthday. This was the first recipe I tried, and it's dreamy! I did do a little adjusting, as it wasn't sweet enough for me. So I added a teaspoon of vanilla extract and a 1/4 cup of sugar. I also used baker's sugar, which is more fine than regular sugar (it blended perfectly). This does taste just like an Orange Julius. Does anyone remember that old Saturday Night Live sketch where Sylvester Stallone is obsessed with Orange Julius? YUM, Mr. Stallone! I will try this recipe with other kinds of fruit concentrates. I bet this would be a great frozen alcoholic drink...now I wonder what kind of liquer would work with this??? Hmmmm....
