Pineapple Spiced Chicken and Rice

I tried this recipe because it had ingredients that I like. But I did not like it. First of all the "rub" turned out like a paste which was too thick. The only change I made was I used chunk pineapple because that was all I had. I also followed the hint to use the juice in the rice (which turned out great.) I only cooked the chicken for 20 minutes because if you cook for the 30 to 40 minutes the recipe calls for it would be too dry. I will try this recipe again using bone in chicken thighs.

Chef John's Smothered Pork Chops

If I could have given it 10 stars I would! The only changes I made were for health reasons, I can't have buttermilk so replaced it with non-dairy creamer. Served it with green beans and buttered noodles. This is a definite keeper! Thanks Chef John!!!

Taco Seasoning II

This was a great alternative the package stuff! I have to watch a very low sodium diet and can once again enjoy tacos! I added about 1 tsp more cumin and used half onion powder and half dried onions, I did the same thing with the garlic. To those of you who said it was bland or needed salt I suggest playing with the recipe to suit your tastes. This is a keeper in my recipe box.

Lemony Chicken with Artichoke Hearts

This was awesome!!! The only change I made was to use white wine for the vermouth and I used cutlets so I cut down the simmering time to 10 minutes then took chicken out of the pan to mix in the artichoke and thicken with the cornstarch. I love lemon so it was just right for me, I only had one lemon so I used the zest also. I'm on dialysis and have to watch my salt intake and this was a wonderful...healthy and tasty. Will definitely makes this again!!!
