Cake Balls

This is the 2nd time I used this recipe. Very good, but I do not folloow the directions as they are written. There would be way too much icing in the cake balls. Like another reviewer said, you can use coffee, ice cream topping or icing to make the cake stick together. I cut the outside edge of the cake and threw it away. I added coffee and carmel ice cream topping to the cake. You don't need a lot, just enough to make the cake moist, and roll them in balls. Freeze them. Get several out of the freezer at a time and dip them in chocolate. I used toothpicks and it worked great! I think I am going to make German Chocolate Cake Balls the next time I make these. I think they are better than cake. If you listen to these instructions, you will get cake balls that still have a cake consistency. Otherwise, it would be too moist and too sweet.

Marshmallow Fondant

This was the best recipe! The last time I made fondant, I used someone's suggestion of using marshmallow fluff. It did not work. This time, I followed the recipe. It worked great! I made my son a skylander's cake and he is thrilled with the results. This was easy to make, easy to use. I did use one reviewers suggestion to use cornstarch when rolling it out. That worked great! For the stone on the portal, I crumpled a brown paper bag and it gave the texture of stone. I will use this again! It was easier than decorating with icing!

Tiramisu Layer Cake

YUM! This was so good. I did make some changes. First of all, make sure you use coffee powder, not instant coffee. Some reviewer said that their instant coffee did not desolve. That is because the recipe calls for coffee powder. As the other reviewers did, I doubled the coffee powder, kahlua, and coffee whereever it called for those ingredients. I made 3 layers of cake. One plain and 2 coffee flavored ones. I also used cream cheese for the filling. The frosting is basically homemade whipping cream with an added kick. It helps to have a cold beaters and cold bowl to beat it in. This recipe was really good and I will make it again. I made it the day before so the flavors would intesify.

Lemon Lover's Pound Cake

I really liked this cake. I can't say I would call it "Lemon Lover's Pound Cake." It is not a pound cake. It was not that lemony. However, I will make it again with some modifications. I added 1/2 cup fresh lemon juice with pulp. I also added more lemon extract. It was a light lemon flavor and was very moist. My family loves it and I liked it too. I just wish it had more of a lemon flavor. I put a lemon glaze on top and this helped magnify lemon flavor. Next time, I think I will make it in 2 round pans and put a lemon curd or something in the middle. I baked this in a bundt pan and also put some of the batter in a 4 inch round baking pan. I baked it at 325 for about an hour.
