Oatmeal Chocolate Chip Pancakes

My son's allergic to eggs, so I'm always happy to find recipes that are egg-free by design. To those who found the batter thin -- I don't think you waited long enough. I actually took the milk (cow, not soy for me), warmed it a bit in the microwave, and pre-mixed the oatmeal and the flax with the warm milk and let it sit a few minutes so it had time to activate the thickening properties of both. I didn't have pastry flour, so I did a mix of regular flour and whole wheat. A good, filling breakfast option for the kiddos. I made a double batch so I have plenty to reheat during the week.

Oat Waffles

With my son's egg allergy, it's always tough to find recipes I can convert over and this one worked just fine with Ener*G egg replacer, even after I accidentally used too little milk.

Foolproof Rib Roast

This was my first attempt at prime rib. Got rave reviews from my family tonight! They've asked that it become a new Christmas Eve tradition. I actually did two separate 5 lb roasts in one pan, and just doubling the rub recipe.

Chinese Broccoli Slaw

I did a double batch using two 12 oz bags of broccoli slaw and one 12 oz bag of other slaw (I think it was just "regular" slaw mix -- had more carrot than the broccoli slaw?). Huge hit at the BBQ. Will certainly make again.

As a mom of a child with an egg allergy, I love finding recipes that were designed to be egg-free to start with, and super happy when they taste great too! Note: As others have mentioned, this dough gets sticky quickly. Work with small batches and keep the rest in the fridge. Also use plenty of flour on your rolling surface.

Crazy Crust Pizza Dough

My son's allergic to eggs, so I always have to tweak a lot of recipes I find on here. This was a great start though. Instead of eggs, I used two tablespoons of ground flax seed and some extra milk. I also used bread flour rather than regular flour to make it a little firmer, since I didn't have the eggs to help with the structure. Hubby approved! My son wouldn't eat it, but that was just because he saw something green in the pasta sauce LOL. Look forward to trying it out again soon.

Seminary Muffins

These rock! Because of my son's allergies, we skip the nuts and replace the egg with 1 t baking powder / 1-1/2 T oil / 1-1/2 T water. Other than that, they're a great way to use up ripe bananas.

Soft Christmas Cookies

Followed the advice from the other reviews -- I used 3 cups of flour, 1/2 butter 1/2 margarine, and baked at 350 for 8 minutes. My son's allergic to eggs, so I used an extra 2 t baking powder, 3 T oil, and 3 T water to replace the eggs. Rolled out really well after refrigerating overnight, and quite tasty too.
