Artichoke Nibbles

Loved these - great texture and flavor. I cut all of the ingredients in half (with the exception of using 3 eggs instead of 2) and baked in an 8x8 pan. Also omitted the salt and added additional hot pepper seasoning per our taste. To my calculation each piece (1/16 of the 8x8 pan) is about 45 calories...next time will try reduced fat cheese to cut this down a bit.

Bran Flax Muffins

Love em! I did not have carrots and only had one apple, so added some applesauce...also I used All Bran cereral for the bran. Forgot to add the nuts but they were still fantastic. As another reviewer said, as long as you keep the wet/dry ratio appoimately the same they should turn out fine. I made 12 medium sized muffins and saved some of the batter back for later...to that I will add some pecans, coconut and some dried chopped fruit (cherries, strawberries and blueberries).

Cherry Magic Cookie Bars

These are fantastic - a new Christmas favorite for us! I used about 1/2 of the sweetened condensed milk on the crust and reserved the rest to pour over the other toppings to help them stick together better - I hate cookies and bars that crumble all over.

Soft Oatmeal Cookies

The best oatmeal cookie I've ever made. Would be delicious plain or with your favorite additions - I divided the dough and put raisins into one half and butterscotch chips into the other. I used a sugar-coated glass bottom to press them, but didn't press them down much, just a little as they continue to flatten as they bake.

Unbaked Chocolate Oatmeal Cookies

So quick to make and everyone loves them! I add another cup or so of oatmeal to thicken them up. Also, rather than making them drop cookies I like to shape them into a roll and slice them.

Hudson's Baked Tilapia with Dill Sauce

Simple and delicious, a great dish when you're pressed for time. I love cajun flavoring on fish. And the dill sauce was good - very fresh. I did not have garlic powder so used fresh minced garlic instead.

Best Ever Brisket

Melt - In - Your - Mouth Shortbread

I wish I could give more than 5 stars. This was by far my favorite of all the cookies we made this year. I topped them with a tiny amount of icing and Christmas sprinkles, just to make them prettier. One thing I learned while making them is: the batches I left in the oven a minute longer were a lot less likely to fall apart. The first batch I made, about half of them crumbled apart while removing them from the cookie sheet, but after that, I just added a minute to the baking time and it seemed to solve that problem. I will be making these bad boys EVERY year!!

Christmas Wreaths

I'm not a huge fan of marshmellowy things but I'm giving them five starts because they are SO adorable!! When I first read the recipe I thought it would take forever, but it only took about 30-45 minutes from start to finish. I used rice crispies for the cereal, and to decorate I used colored sprinkles and cherry chips. I used pull & peel cherry licorice for the bows, it seemed to be the perfect length, and I was amazed at how it sticks to itself - when you shape a bow you don't have to 'tie' it - just press it between your fingers for a few seconds and it stays!

Melt In Your Mouth Toffee

Mmmmmmmm...I thought it tasted like a heath bar only better. I too used a jelly roll pan so it would be thinner. I also sprinkled the chocolate chips on after it was in the pan, let them melt a few minutes and then spread them out & sprinkled on the nuts. Everyone loved it.

Peppermint Bars

A must have for our Christmas trays from now on, these are pretty as well as delicious and simple to prepare. The only thing I would change is to leave the crushed canes out of the dough, and just sprinkle some on top of the chocolate. I did not have any trouble with sticky dough because here's what I did: I wet my hands down before pressing the dough into the pan, and when it was all nice and even in the pan I dabbed up any excess water up with a paper towel so it wouldn't burn.

Select-Your-Own Chocolate Truffles
