Roasted Cauliflower Soup

I picked up a huge head of cauliflower at a roadside produce stand. I can't stop eating this soup. It is a THICK, rich soup with lots of flavor depth. Changes I made...used real garlic and substituted apple cider vinegar for the sherry. I blended the whole thing in my Ninja to make it creamy. I can't stop eating it. Did I mention that? Broccoli and Onion Casserole

Made this for Easter, to rave reviews. I fried the onions in the butter. Did not pre-steam broccoli. Added half the cheddar to the sauce, sprinkled the rest on top. Used double the amount of panko bread crumbs. Baked until broccoli was tender, about 1 hour. Added 1/2 t salt, 1/4 pepper.

Chicken Enchiladas

I would give this 6 stars if I could. We made a few simple changes, just for our preferences...used shredded chicken, light soup, low fat sour cream, cut cheese to 2 cups. Added 1 tsp cumin & chili powder to chicken. Awesome, this is a keeper. Presents well, I would serve this to company. Thanks for sharing!

Excellent Venison Soup

If I were to make this again, I would use 1/2 the meat, double the tomatoes and add frozen green peas at the end. First time I ever had parsnips - they were good and added to the overall flavor.

Fresh Tomato Shrimp Pasta

We don't have a food processor, so we sauteed the onion and garlic and then pureed in the blender. We added 1/2 cup fresh corn (we got that idea from another recipe on the site) and skipped the cheese to save calories. Unique meal, will have it again.

Crab and Swiss Quiche

I use 3 eggs and 1/3 cup miracle whip instead of mayo. Also add about 1 cup steamed veggies - broccoli, peppers, etc. - and some seasonings - salt, pepper, paprika.

Favorite Banana Blueberry Quick Bread

Forget letting it cool completely - slice it up and eat the whole loaf warm! Yum Yum! I used 1 cup frozen blueberries and increased the baking time to compensate. Might also add some vanilla and nutmeg next time.

Excellent and easy. Here is my variation -- use chicken tenders or cut breasts into tender size strips. Bake on a pizza stone or cookie sheet for 20-25 minutes at 400.
