Lentil and Smoked Sausage Soup

I wasn't sure how I felt about lentils, but I thought this was delicious! Even more surprising- my boyfriend loved it! We doubled the recipe so it would last a couple days (we also froze the leftovers, which held up very well). We are meat eaters, but wanted to try making this vegetarian used Field Roast veggie sausages (found at Whole Foods, recommended to us by our vegetarian friends), which were surprisingly delicious. We used the Mexican Chipotle flavor, which were very spicy, so we halved the cayenne (and we like spice!). The only other change was to add 2-3 times as much cabbage as called for- it's so good for you (and yummy)!. Thanks for a great recipe that will be added to our vegetarian collection.

Double Tomato Bruschetta

Not much to say here that hasn't already been said. This really is incredibly delicious bruschetta. I like to use it to make a pizza (the full recipe would make about 2 standard size pizzas). I think the sundried tomatoes are the secret!

Pumpkin Cheesecake II

This cheesecake was fantastic! I've never made a cheesecake before, but I was spending thanksgiving at my bf's mom's place, so I wanted to bring something delicious- this definitely fit the bill! I read every article I could find about preventing cheesecake cracking and tried all the tricks, and my cheesecake still cracked... so I suggest you just accept this and go with it. On the plus side, the pecan maple glaze recommended by everyone is not only delicious, but looks wonderful on top of the cake (and hides every flaw). I can't really add anything here that hasn't already been said, except for one thing. Most recently I made this cheesecake using Trader Joe's Old Fashioned Cinnamon Grahams for the crust. These are delicious, and I recommend them, but since they are sprinkled with cinnamon sugar, I would halve the white and brown sugar in the crust so it doesn't turn out too sweet. Thanks Cathy!

Grilled Prawns with a Spicy Peanut-Lime Vinaigrette

This is very, very good. I followed the recipe almost exactly. The only thing I changed was adding coconut oil instead of peanut oil in the sauce (which is healthier and added a very subtle coconut flavor to the already delicious sauce). The sauce is a little runnier than most peanut sauces I'm used to- it's definitely more of a vinaigrette, I added a couple tsps of cornstarch and still found it a little runny- delicious over rice though! There is a pile of sauce left over... if you're just dipping the shrimp, you could probably get away with halving it.. A couple of people have mentioned skipping the marinade... do NOT do this! The marinade is absolutely delicious with flavors of lemongrass, garlic and ginger... I marinated mine about 45 mins, and didn't wipe the chunks off the shrimp before grilling. My bf thought the shrimp was delicious and ate it on its own... I thought it complemented the flavors in the sauce wonderfully. Yum!

Smokin' Scovilles Turkey Chili

Oh my goodness. This is, quite possibly, the best chili I have EVER had- I can't believe I made it myself. I followed the recipe exactly, and wouldn't change a thing. With the list of ingredients, I was worried this would be a lot of work, but it couldn't be easier. I threw the onion/garlic/pepper/habanero in the food processor, and the rest is spices or canned. I love how wonderfully smoky and complex the flavors are. Un-buh-lieveable.

Orzo with Parmesan and Basil

Deceptively simple ingredients come together in a delicious way. We make this very often- it makes a great side dish for just about anything. Great as leftovers, but also nice enough to serve when you have company (with a little fresh basil garnish). Have also made it with dried basil in a pinch, and it is pretty good, but I think it's the fresh basil that makes it. Great recipe!

Chicken Tikka Masala

I am a HUGE fan of Indian food, and this was a delicious version of Chicken Tikka Masala. Not *quite* as good as my favourite Indian restaurant (which I wouldn't expect, since I don't have a tandoor), but definitely good enough to make again and again. Unfortunately, I can't give it a 5 since I made a few modifications. I used fat-free yogurt (had it in the fridge) for the marinade and only added 1 tsp of salt. To the sauce I added an extra clove of garlic, only a pinch of salt, and whole milk instead of heavy cream (again, using what I had in the fridge, but the sauce was plenty thick, so I really don't think it needed the cream). I also added 3 or so shakes of garam masala to the sauce after the 20 min simmer (For people who aren't familiar with garam masala, it's usually added near the end of the cooking time in indian cuisine, because it can take on a bitter taste if cooked too long). I served it with naan, and it was delicious! Thanks so much, Yakuta!

Eggplant Parmesan II

I loved this eggplant! My boyfriend and I are trying to eat at least 2 vegetarian dishes a week, and this will be a huge help. I give the recipe 4 stars because I modified it slightly: I used homemade sauce, which I think made a big difference to the taste. I also used fresh basil, because I had a ton on hand, and sprinkled a layer in the middle. I only had unseasoned bread crumbs on hand, so I made my own by adding italian seasoning, garlic powder and parmesan cheese. I think I used a little less cheese than called for, but I needed an extra egg to coat all the eggplant (maybe I cut it too thin?). Regardless, a great recipe that you can do a lot with! Thanks!

Classic Spanish Sangria

This was fantastic! I made a couple of batches for an Oscar party I had the other night and couldn't believe how tasty it was! I used less than 1 1/2 cups of rum (about 1 to 1 1/4 cups) and no one thought it was too strong. I used spiced rum and a $6 bottle of red and it turned out great. Added strawberries, an orange and lime, black plums, and some panned peaches- made for a nice variety of colours. Bottom line: this tastes like you spent a long time on it, but it's unbelievably easy to make! If you like sangria, you'll love this recipe!

Bean Quesadillas

I made these for me and a friend, and we both loved them. I had some leftover filling, and they are just as good (maybe even better!) the next day. To avoid the mess I also found it easier to use one tortilla folded in half. Also, after my disaster frying them in a skillet, I tried brushing a indoor grill with oil, and cooking them on there (which also avoided the hassel of flipping!)- it worked perfectly!

Lettuce with Hot Bacon Dressing

The dressing is absolutely fantastic!! My boyfriend said it was the best salad he'd ever had! The only reason I gave it a "4" is because I changed the salad contents... Instead of lettuce I added baby spinach and instead of radishes I added grape tomatoes. The result was wonderful! I've made it againand again!

Italian Sausage Soup with Tortellini

This soup is absolutely amazing! The first time I made it I used canned tomatoes instead of fresh and sweet Italian sausage... The second time I used hot sausage and took the time to peel/seed fresh tomatoes...it was worth it! The second soup was much better! I found the canned tomatoes to overpower the broth... and the hot sausage added a great kick! I want to make it over and over... serve with crusty bread and the rest of the bottle of wine ;)

Pesto Lasagna

This was tasty. I used Classico pesto and alfedo sauces, which I thought tasted great and made it easy to make. The only thing I might change in the future is to add some alfredo sauce on each layer instead of only on top, to add a little more flavour.

Italian Breaded Pork Chops

I thought these were tasty but not fantastic. I'd probably make again, but maybe tweak the recipe a little. The pork chops did come out nice and moist, I just felt the recipe was missing something.

Tasty, but I wish I had listened to earlier suggestions to make it the day before, because maybe the potatoes would have taken on more of the flavour. I did double the spices as suggested, and still didn't find it overly spicy. Nice and filling, I'll make it again!

Naan

Yummy! This was my first attempt at using yeast, and I have a few suggestions for beginners- use fast-rising yeast! It took me a long time for my yeast to double in size (although someone finally suggested to put it in a luke-warm oven, which sped it up). I don't have a barbecue, but did them on an indoor grill and they turned out great! Very easy to freeze the dough so I can have naan whenever I like- which is often!!

Enchiladas

This was my first attempt at enchiladas, and they were delicious!! I added Extra Spicy taco seasoning and a little extra jalepeno, because I like spicy stuff. I used cream cheese and "Tex Mex" blend cheese (because I was too lazy to grate it all), which was still great. I also used flour tortillas, because that was all I could find, but didn't listen to previous advice- you HAVE to grease the pan with these. Also, I seem to have gotten almost twice as many enchiladas as expected... not a bad thing, in my opinion, just be sure to have extra tortillas on hand!

Spiced Sweet Roasted Red Pepper Hummus

Fantabulous! I had a rough time tracking down tahini, but now I have a big tub of it and make this all the time! Everyone loved it, even those who "hate hummus".
