Best Ever Banana Bread

Delicious and very easy. I made one loaf with chocolate chips....tasted good but they all sunk to the bottom of the cake.

Too Much Chocolate Cake

Wow! I don't even like chocolate cake, but found myself taking slice after slice! One of the best "doctored" cake mix recipes I have tried so far. So moist and chocolatey it does not need frosting. Also used the same recipe formula with yellow cake mix and pistacio pudding mix (and chocolate chips) and it turned out to be delicous!

Blueberry Cream Cheese Pound Cake I

Very easy and good cake. I made it with white cake mix since that was all I had, and cooked for 10 minutes more at 350 degrees for the last 10 minutes. It disappeared fast at work! Next time I will add lemon zest and cardamon so no one will know it is not from scratch!

Creamy Rice Pudding

What a great rice pudding! I tried to make it healthier using brown rice (increasing the cooking time of the rice) and it lost nothing in taste! My new favorite rice pudding recipe. Have tried with dried tart cherries instead of raisins and it gave a nice contrast.

Mock Tuna Salad

Love this recipe! Takes minutes to make and is so good on crackers, I could eat the whole batch in one sitting! Doesn't taste like tuna salad to me, but since I don't like tuna salad all that much, that was not a bad thing! I ran out of chick peas and tried with it white beans instead and it was good too. Prefer the texture when I made with a potato masher as instead of in a food processor (and it was less clean up!)

GA Peach Pound Cake

Great pound cake recipe. I used over-ripe necarines and some frozen peaches. The first day I felt like it was lacking a peachy flavour, but it tasted more peachy the next day. I added 1 teaspoon of lemon zest and 1 teaspoon of ground cardamon (my pound cake secret ingredient!) and used cinnamon sugar to dust the greased pan for the crispy crust. I can't wait to try it with other fruits.

Strawberry Pie II

Delicious pie. I was not sure how much a quart of strawberries was, but I used two 1lb punnets, one for the base and one for the sauce, used about 3/4 cup of sugar and a splash of lemon juice for some zip. Sauce was thickened in about 3-4 minutes Would be even better with a home made sweet pastry crust. A delicious taste of summer!

Black Bean and Couscous Salad

Delicious and easy. I followed the recipe exactly (but I used corn off of the cobb). Very fresh tastiing and the perfect ratio of cous-cous to veggies/beans. Will definately make again.

Curried Coconut Chicken

Absolutely delicous! So easy and the flavors come together so much better than they read in the recipe. I did not have coconut milk but used the creamed coconut (the block - not the sweetened cream of coconut!) and added water to make up to 14 oz. This dish reminded me of a butter chicken dish I had tried at a local Indian restaurant. Will definately make again.

Simple Sponge Cake

Looking to recreate the birthdays of my childhood in England, my mum (RIP) used to make this same sponge cake with 3oz sugar/3oz SR flour and 3 eggs. It was light and fluffy. She would sandwich with jam, sliced bananas and whipped cream, then make a glace icing of confections suger and lemon on top. She made it seem so easy, so not sure what I did wrong; perhaps I over beat the eggs, or should have used cake flour, or over folded it or cooked for too long, but mine turned dry and tough! Unfortunately I did not realize how bad mine was until we had to cut into my cake with a hacksaw my son's 2nd birthday party, it was alittle bit embarrasing! I will try again until I perfect this.

Green Onion Dip I

Very tasty and easy dip. I followed the recipe except I only had cilantro instead of parsley and I just chopped and mixed the ingredients instead of processing them. The only problem is, it was so good I ate too much of it and felt alttle guilty afterwards! I might try with lower fat sour cream/mayonaise next time just to keep the calories down.

Amish Macaroni Salad

Excellent macaroni salad recipe, and I am not even a macaroni salad person! I always thought it was a waste of calories, but I could not stop eating this! I followed the recipe, except for cutting the sugar down to 1/4 cup (and it was still sweet) and I doubled the macaroni. Will definately make again.

Pretty good recipe. Cuts well and more zucchini than my favorite recipe, but since I can't find that one this might have to be my new stand in. I like the idea of adding other fruits and veggies and will try with apple and carrot next time.

Eggplant Parmesan II

My first time making eggplant parmesan; it was one of those dishes that seems quite intimidating, but this was so easy. I loved that it was baked not fried as it is always so heavy at most restaurants. I did not have breadcrumbs so made my own in the food processor with brown bread and Italian seasoning, and made a quick spaghetti sauce with canned tomatoes, garlic, onion and seasoning. Delicious and easy; even my preschooler ate it quite happily!

Fresh Strawberry Upside Down Cake

I was alittle disappointed in this cake...not enough strawberries, but perhaps I should have measured the strawberries after I crushed them not before? Perhaps I will try again with more (or other fruit) and maybe even try a chocolate cake mix. I was interested to see another similar recipe on this site with same ingredients but reversed directions (marshmallows on bottom of pan, cake mix in the middle and strawberries on top...and the cake reverses itself in the oven!) Might try that too!

Mango Muffins

Definately popular with everyone but I was hoping for more of a mango taste, but perhaps that is just how cooked mango turns out? I ran out of baking liners but they cooked perfectly without in a non-stick muffin pan.

Mom's Zucchini Bread

Delicious recipe! I only had 1 cup of grated zuchinni left (after making Connie's zuchinni "crab" cakes from this site) so made 1/2 batch of the recipe with 2 eggs and reduced sugar to 1 cup. I also subsituted 1/2 the oil for natural apple sauce. Bread was moist and delicious. Could probably reduce sugar by atleast another 1/4 cup next time. Another nice touch is to sprinke cinnamon sugar on greased pan before pouring in batter and sprinkle on top for sweet and crispy crust.

Connie's Zucchini "Crab" Cakes

Very tasty for a vegitarian dish. I followed other reviewers' suggestions and baked these on a greased baking sheet for 12 mins on each side and they turned out very well (sometimes you do have to make small compromise to taste for health!) My husband who only eats Kosher and has never tasted crab loved them and even my 2 year old gobbled them up and said "more?" I used Italian breadcrumbs because that was what I had on hand and served with mayo with fresh chopped parsely mixed in. Next time I might up the Old Bay Seasoning by 1/2 teaspoon.
