Carrot and Raisin Salad II

Near Perfect just as written! I followed the recipe except for substituting lime for the lemon juice and adding 1 tablespoon each of sunflower seeds, dry roasted peanuts and soy nuts. Wow was this good atop a large garden salad for a lighter dinner. Thanks for sharing Linda.

Barbie's Tuna Salad

I wasn't real sure about the inclusion of pickle relish since I personally dislike it but the reviews were so positive I wanted to try it. I made a couple minor adjustments to a double batch. I cut the mayo by 1/3 and substituted 1/4 tsp of dill seed for the 2 tsp dill weed suggested for a double batch. I also mixed sweet relish at a 50/50 ratio with Hellish Relish from Roxtar Gourmet for a bit more interest. Thanks Tanaquil! This stuff was a real hit and went like everyone's favorite ice cream. I served it with warm crusty home made bread wedges.

Southern Spain-Style Gazpacho

Outstanding! Every bit as delicious as that which We ordered every day while in Rota, Seville, Cadiz and El Puerto de Santa Maria. Many variations are available here in south FL but none as good as this, especially when made at home.

Tilapia Feta Florentine

Wow!! Stupendous! I fixed this tonight in less than an hour with a fresh wild caught Tilapia that I caught and filleted myself. I followed the recipe exactly like it is offered with the one exception of too little spinach ( I had only a 10 oz bag of fresh spinach, but I did have a package of frozen ) I thawed the frozen in the microwave then added it to the baking dish before I placed it in the oven. My wife and I devoured the dish accompanied by tall cool glasses of homemade Sangria. I'm so thankful for this recipe!

Stuffed Breast of Veal

I had 2 small 1 1/2 lb breast cuts so I cut the quantity of ingredients to accommodate. I used a filet knife to cut the pockets deeply into the meat and stuffed them full. I increased the temp to 425 degrees because I was under pressure to get this done. After 2 1/2 hours covered I uncovered for an additional 25 minutes..DONE! Perfect! Rave reviews, even from my mother-in-law. Recognizing the normally fatty content of this cut of veal, I knew that 3 lbs would serve no more than 4 or 5...Excellent recipe!

Unbelievable Fish Batter

Wow! It can't be this easy! I also read the previous reviews and cut back to 2 Tbsp of baking powder, I used B/C Better for Bread flour and I left out the salt but added 1 tbsp of Everglades Seasoning and 1 tsp of McCormicks Italian Herb mix...on my taste buds, it's a keeper!

Pumpkin Coconut Bread

Thank You Donna...I made this yesterday morning, first thing. My little cottage still smelled like the warmest holiday wishes after the 11 PM news and oh my!, the rave reviews! "where'd ya get that recipe?" I followed the recipe substituting only canola for veggie oil. It's wonderfully moist and sinfully delicious..I had to share cuz my healthier lifestyle would have been sorely tested with this in the cupboard
