Red Lentil Curry

Great recipe. Easy enough to make on a regular basis. I love curries and even take part in a club that ventures out to new restaurants to try their curries. I may start having the club come over to my house! The only things different I did were: Coconut oil instead of vegetable oil. The subtle coconut really makes a different. I prefer the benefits of coconut oil over vegetable oil any day. I didn't have fresh ginger so I just used a teaspoon of ground ginger. I also didn't have tomato puree on hand, so instead I used a 6 oz can of tomato paste mixed with 6 oz of water and added some fresh tomato chunks. I did have to add a little more water to loosen up the mix. I also added at least a half teaspoon extra of all spices to up the flavor a bit. Overall, great dish. I served over some basmati rice and plopped a bit of mint chutney on top. Can't wait to eat leftovers for lunch tomorrow (this definitely is enough for 6-8 meals!)!

Erica's Delicious Slow Cooker Beef Roast

There was something severely lacking in this recipe. Although my boyfriend wanted to eat the entire 2.5 pounds after 10 hours had gone by, I was still left a little unimpressed. I used 5 cloves of garlic instead of 4, 2 tablespoons of worcestershire, potatoes, onions, and carrots. I also added parsley and cream of garlic mushroom soup. I rubbed 1/2 tsp of salt and pepper each on each side of roast. I also threw in 2 tablespoons of butter (not like that would do too much to flavor the entire roast, but it really needed SOMETHING) Why did it taste so bland?

Salmon Patties I

I made these for the first time after wanting to try them for a long time! What I did differently was add dry green onion, cayenne pepper, red onion, about 6 cloves of garlic minced, omitted the italian crumbs and seasoning, used garlic bread crumbs, tbls of mayo and a squirt of mustard. Oh don't forget some brown sugar! I just eyeballed everything. These tasted really good, almost as if i've had it as a base for a crab cake somewhere. I just have to figure out how to cut some of the salt and they should be better next time. A remoulade sauce would go perfectly with these. The only downfall of making these was the fact that the salmon was stuffed into the can with it's spine and all. It was actually kinda gross, but not really at the same time. It was fun to make these!

Angela's Awesome Enchiladas

These were pretty good. The taco seasoning overpowered it just a little bit, I'd like to have tasted more filling. I would recommend using corn tortillas for a real good flavor. I used wheat instead, and it took away some taste (you really taste the wheat as opposed to flour). I also used monterey jack cheese instead, cheddar is just too much for the dish in my opinion. I heated the tortillas in a pan w a little enchilada sauce to cover the entire tortilla. Might have been a bad choice, was a bit soggy. This made 8 enchiladas (big) using 12" tortillas. There's a lot of chicken filling! Depends on how much you plan to put inside, I suppose. Pretty good, but I'd like to try a different enchilada sauce next time, I used Old Paso or El Paso whatever it is, and it wasn't very good. The overall taste was pretty good, and I'll have to do some tweaking for next time.
