These were pretty good. The taco seasoning overpowered it just a little bit, I'd like to have tasted more filling.
I would recommend using corn tortillas for a real good flavor. I used wheat instead, and it took away some taste (you really taste the wheat as opposed to flour).
I also used monterey jack cheese instead, cheddar is just too much for the dish in my opinion.
I heated the tortillas in a pan w a little enchilada sauce to cover the entire tortilla. Might have been a bad choice, was a bit soggy.
This made 8 enchiladas (big) using 12" tortillas. There's a lot of chicken filling! Depends on how much you plan to put inside, I suppose.
Pretty good, but I'd like to try a different enchilada sauce next time, I used Old Paso or El Paso whatever it is, and it wasn't very good.
The overall taste was pretty good, and I'll have to do some tweaking for next time.
